In that fashion, we designed a straightforward recipe that consists of Pilsner malt extract, flaked corn and a scoop of Carapils with two dashes of Galena hops to provide just a kiss of bitterness. To make it a true to form cerveza, ferment cold with a Mexican yeast strain like CellarScience® BAJA. Originally developed and popularized by the Modelo Group, this Mexican yeast strain produces clean lagers and finishes dry. Originally developed by Barebottle brewer John "Magic" Montes De Oca, Torcido took gold in the International Pilsener category of the 2019 Great American Beer Fest and in turn became the inaugural inductee into the Viking Malt Hall of Fame.
