Instead of rushing in to catch the wave, we spent a year developing a recipe kit that is both super tasty and easy to make. Our kits include everything you need to nail your very first batch of hard seltzer with easy-to-follow instructions. Making Your Own Hard Seltzer!

When we began designing our hard seltzer recipe kits, we wanted to make sure that they were both super tasty and easy enough to make that any homebrewer would crush it on their very first batch. Over the course of year, we developed our seltzer kits by fine tuning the water profile and nailing down the nutrient requirements. While seltzers are simple beverages, they can actually be very difficult to ferment if you don’t add the correct yeast nutrients and water salts. After many trials and failed attempts, we found a recipe that fermented quickly, cleanly, and ended at a low and consistent final gravity. The nutrient profile and water salt additions were developed by our own Colin Kaminski, a former brewmaster and co-author of the book Water – A Comprehensive Guide for Brewers. Colin tested many different nutrient mixes and developed an easy-to-follow plan where the nutrient additions are staggered throughout fermentation. This ensures the yeast not only start strong, but finish strong as well. Each kit includes a water salt mix that provides some needed minerals and alkalinity to keep the yeast from driving the pH down too low. Our Hard Seltzer Recipe Kits are designed to be brewed with RO or Distilled Water. While tap water can be used as a substitute, we have found that seltzers made with tap water can be difficult to clarify.     Propper Seltzer is specially formulated to power your favorite beer yeast through a healthy sugar-based fermentation in as little as 7 days. One dose per five gallons will provide all the nutrients needed for a quick, successful batch of hard seltzer. For an even faster fermentation, we recommend Omega Yeast's Lutra™ Kveik strain, which can get the job done in as little as 4 days' time.  One (1) pack provides yeast nutrient for (5) five gallons of sugar wort at 1.060 (15°P) or lower. Recommended for use with these strains: Lutra Kveik Hornindal Kveik Voss Kveik Espe Kveik Directions: Add sugar to hot water and stir to dissolve. Boil for 10 min, measure gravity and adjust. Once desired gravity is reached, turn off the heat source and add Propper Seltzer nutrient. Transfer sugar base to the fermenter at desired ferm. temp. Aerate by shaking or oxygenating. Unfortunately, most nutrient products on the market fall short of this mark. Some solutions promote nitrogen bound within dead yeast cells, like our own FermFed DAP Free, as being suitable for seltzers. However, after extensive trials, we’ve found that this approach doesn’t deliver the neutral flavor profile needed for the best seltzers. While fermentations may complete, they often do so with unwanted yeast-derived off-flavors. Yeasts that struggle to finish tend to produce fusel alcohols, acetaldehyde, and sulfur compounds. Our Dynamo 800 Nutrient is specifically formulated to provide yeast with everything they need to achieve a clean fermentation in as few as 5 days. When designing this nutrient, a decision was made to make flavor the top priority. Additionally, it dissolves easily without the need for stirring or heating, making it simple and efficient to use. Dynamo includes both organic and inorganic nitrogen to achieve a fast, clean fermentation in the challenging environment of seltzer production. Like the 800-meter race, it’s not just about pure speed—it’s about endurance and precision. While some products prioritize fermentation speed alone, we believe Dynamo 800 Nutrient strikes the perfect balance.
