Safety Bulb pipette filler for use with solutions that should not be mouth pipetted. In general, it is best to use the filler with anything that is not a wine sample.To Use: Squeeze filler and place on top of the pipette. Place the pipette in the solution, allowing the bulb to re-expand, drawing liquid into the pipette. Draw liquid up past the point in the pipette that you would like it filled to. Now, being careful not to draw up excess liquid or squeeze out what you have in the pipette, quickly remove the squeeze bulb and place your index finger tightly over the top of the pipette. Now by gently lifting your finger, you can allow the liquid to run out to the level that you're looking for.**Tip:** Be careful not to draw your liquid up into the filler. Many chemicals that are used around the lab can degrade the filler and cause poor sealing, making the filler harder to use. A great way to get a feel for the tool is to practice for a little while with some water, until you can easily remove the filler and seal the pipette with your finger.

The RAPT Controller is mounted to the top of the boiler body, allowing for easy operation when you have the unit set on the ground. The controller can be tilted upwards to give you an even better view, or it can be removed from the BrewZilla entirely if you’d prefer to mount the controller on your wall or lay it down on a workbench. From the controller, you’ll orchestrate your entire brew day. Program mash steps, dial in element power, and operate the integrated pump all from one screen.
But the RAPT Controller is much more than a beautiful, full-color display switch board. Once synced to the RAPT Portal, you’ll be able to track, record and monitor your brews online. No need for handwriting notes or punching brew day details into your phone – all of the data from your brew is automatically logged to your portal profile. This information doesn’t just include your mash profile; it also captures detailed information about your element power and pump activity, opening the door for very precise repeatability.
And the RAPT Portal isn’t just a digital archive for your brew days. With your BrewZilla powered on, you can control your brewery from virtually anywhere using your phone’s web browser. Not sure when you’ll be home from work or your kid’s ball game going into extra innings? No problem! Before you head out, simply log into the RAPT Portal from your phone and tell the BrewZilla to start heating your strike water. KegLand is currently developing various Bluetooth devices such as the Bluetooth Beacon Thermometer and other sensors which will be compatible with your brewery upon release. The RAPT Controller is able to receive information from Bluetooth Low Energy (BLE) devices, adjusting its processes based on this new stream of information while simultaneously logging it to your RAPT Portal. With the Bluetooth Beacon Thermometer, for example, you’ll be able to feed temperature readings from the top of your mash bed to the controller. The controller will then compare this reading with the main temp probe reading at the base of the kettle and adjust element cycling based on these combined readings.
Finally, the RAPT Controller WiFi connectivity allows you to update the controller’s firmware with a single click. Take advantage of new features and accessories as soon as they become available by simply keeping your BrewZilla connected to your local WiFi network. And again, the WiFi is already built-in! No need to come back for an expensive add-on accessory down the road.
High Capacity Malt Pipe
With an approximately 23.5 lb capacity, the BrewZilla can mash nearly 50% more grain than similar sized models of the Anvil Foundry and Grainfather G30. If you want to fill your fermenter with more than a 5-gallon batch worth of wort, or brew the highest gravity beer recipes, the BrewZilla is the brewhouse for the job. And the included malt pipe is just the beginning. If you want to expand your brewery’s grain capacity even further, KegLand makes Boiler Extension Kits and Extended Malt Pipes for that very purpose. The malt pipe features a perforated section at the bottom which improves mash recirculation flow without sacrificing efficiency.
Concave Base with Center Draining
Leave no wort behind! The concave base with center drain means you’ll be able to extract every last drop of wort to your fermenter. If you’ve brewed in a traditional flat bottom kettle, this center drain may be a bit perplexing at first. Many brewers are used to whirlpooling after the boil to pull hop matter into the center of the kettle, then transfer out using a pick-up tube that pulls from the kettle wall in order to avoid sucking up the solids. But fear not! One of the key features of the BrewZilla is the false bottom protection screen. This screen avoids the need for doing a whirlpool, filtering wort as it transfers and blocking more than 95% of hops and hot break from getting sucked into the pump. This not only prevents blocked pump issues, it also increases the efficiency of your brewhouse by eliminating kettle loss from wort that may have otherwise been left behind.
Ultra Low Watt Density Elements
The concave base on the BrewZilla also allowed for larger heating elements with significantly lower watt density than other breweries. When a lot of energy is coming off of a small element, the local temperature near the element can be so high that it scorches the wort and causes caramelization. Lower watt density essentially means you can produce lighter color beers that would otherwise have fallen victim to caramelization effect. It also reduces that chance of boilovers and reduces stress on the elements which extends their life expectancy.
Easy Access Built-In Pump
The built-in pump allows you to recirculate your wort during the mash for improved efficiency and more even temperature distribution. But it can also be used to transfer your wort from kettle to fermenter rather than relying on a gravity feed, and with the optional CIP Rotar, you can used the pump to clean your BrewZilla (or fermenter) after every use. During your brew day you’ll be able to control the pump from the RAPT Controller with a dedicated button for turning the pump on and off. Another feature you’ll find on the controller is adjusting the pump flow. This doesn’t control the actual volume of the flow (you can do that from the ball valve located on the recirculation arm), but rather cycles the pump on and off automatically based on your setting. At 100%, the pump remains on continuously. But at 80%, the pump will cycle to be on 80% of the time and off 20% of the time. This may not be a feature that every brewer thinks they need, but it’s an excellent way to avoid running the pump dry accidentally, as the time the pump is off allows recirculating wort to filter through the grain bed and back into the pump inlet.
If you flip over the boiler, you’ll find the magnetic drive pump and all the plumbing is right at your fingertips. This means you don’t have to disassemble the base in order to access the pump for cleaning or maintenance if required. It also means the plumbing can be changed more easily too. For instance, the unit comes as standard with the plumbing from the pump feeding both the recirculation arm and the transfer valve, but you change this so the tap outlet bypasses the pump if you prefer.

Please Note: When removing the malt pipe to drain after mashing, it is important to do so slowly rather than in one swift pull. If the malt pipe is removed all at once when it is full of wort, it is possible for the draining wort to spray out and over the rim of the brewery through the perforated bottom. Remove the malt pipe slowly so that some of the wort can drain out before it is fully removed and set on its bottom feet. This can be done by hand on the 35L unit, but for the 65L and 100L units we highly recommend using the Pulley System for removing the malt pipe.
Warning: Do not engage the adjustable lid clamps when brewing with the BrewZilla's standard glass lid. The clamps are only intended to be used with distillation lids or other metal accessories. With too much tension, it is possible for the lid clamps to break the glass lid when engaged.

Water chemistry is perhaps one of the most important (and most intimidating) aspects of brewing a great beer. After all, water is one of the main ingredients! If the tap water at home isn't up to snuff, you probably find yourself making a trip to the store before every brew day to load up on distilled water. Using distilled water is a great strategy that enables you to build your water profile from scratch. This gives you total control over the water's mineral content and pH, allowing you to create the ideal water profile for any particular style. But the gallons upon gallons of store bought distilled water quickly add up, and only increase the cost of each brew day.
The BrewRO System comes in two configurations for either city water or well water. They function the same, but come with different filter configurations depending on your water source. Before entering the deionization filter and reverse osmosis membrane, the city water system runs water through two carbon filters, whereas the well water system runs through a sediment filter and then a single carbon filter. The Vorlauf Arm Assembly is great for recirculating your mash. It fits right into the Ss Brewtech recirculation bulkhead fitting with a 1/2" knurled FPT locking nut. Made from 304 stainless steel.

But we’re a long way from 1849 and it’s time to give this classic, nearly forgotten beer style a chance to step into the modern age. To do that, we’ve combined the Northern Brewer hops that typify California Common with the Simcoe® hops that are so prevalent in today’s California IPAs, creating our first ever hop blend, “Norcoe.” The resulting beer is still a delicious jack-of-all-trades, but with a hop profile that’s at the same time common, and not Common at all!

Features:
Double Walled: A stainless steel double walled skin is filled with a thick layer of polyurethane foam for insulation. This is what keeps the wort at a constant stable temperature with minimal influence from any external environmental temperature changes, providing insulation for your fermentation that a standard jacket cannot achieve.
Integrated Gentle Heating: In the cavity of the fermenter between the outer body and cone sits a 30 Watt, 12V heating element. Unlike standard heating elements/sources that directly heat the liquid, this heat source is designed to heat the environment in between the walls of the fermenter, which in turn heats the liquid. It is similar to controlling the temperature in a temperature-controlled room. The fermenter acts as an artificial environment that can be heated, meaning the temperature is raised in an even and controlled manner which is much better for the yeast.
Integrated Cooling Sleeve: In between the two stainless steel walls sits a cooling sleeve (also made of stainless steel). This cooling sleeve is welded onto the inner wall of the fermenter and can be hooked up to the additionally purchased Glycol Chiller. Temperature is dialed into the Temperature Controller and as the cooling liquid travels through this sleeve, it cools the stainless steel which in turn evenly cools the beer in the fermenter. The cooling sleeve never comes into contact with the beer, it is completely concealed, built into the fermenter, and never needs cleaning or sanitizing - a true innovation for a fermenter of this scale.

300-375 °L - Viking Malt - Viking Chocolate Malt is produced by roasting from pilsner malt. Final temperature and roasting time is somewhat lower compared to their Black Malt. The amylolytic activity of Chocolate Malt is zero. The amount of fermentable extract is rather low. Flavor of Chocolate Malt is burnt, bitter and smoky, but not as intense as Black Malt. Aromas and tastes of coffee and chocolate can be found and they are well balanced in the overall taste.
Chocolate Malt is mainly included in grists for Porters and Stouts, but it can also be used for any other dark colored beers like Dark Ales due to its strong coloring value. Chocolate Malt contributes roasted flavors and aromas with hints of dark chocolate and coffee in any beer. Already with rather low dosage portions a remarkable increase in color can be found together with changes in flavor and aroma. Typical dosage rate of Chocolate Malt is normally under 10%.

Keep an eye on the flow during transfer or monitor yeast activity during fermentation with this 1.5" tri-clamp sight glass. Place the sight glass in-line when you transfer wort from kettle to fermenter to help you oversee how your in-line oxygenator is flowing. One of the few disadvantages of a stainless steel conical is that you can't watch the yeast as they go to work. With a sight glass you'll be able to observe how your yeast are performing throughout the fermentation process. This also makes for a great way to harvest yeast. Simply attach it to your dump valve and close off the other end with a T.C. end cap, collect the yeast and remove the sight glass, cap it at the other end and store it for your next batch.

A very well balanced Pale Ale. You can taste the malt and the hops without being overpowered by the bitterness. We use Crisp Maris Otter malt for a drier finishing Pale Ale. We differ from the standard British Pale Ale recipes by throwing in a 1/2 of Munich for a little roundness of flavor and 1/2 pound of Carapils for added body. The crystal malt used is British Carastan. Northern Brewer hops are really mellow and not at the front of the flavor profile.

A great all-purpose spoon to have on hand on brewing day!
This 24” food grade, high temp plastic spoon is perfect for stirring the mash or wort during brewing. The plastic won’t scratch or ding the sides of your stainless steel kettles. It features a hole at the end of the handle for hanging. Works best with 4 to 10 gallon size kettles.
Tip: You can turn the spoon upside down and use the skinny end to stir inside a carboy!
Wine Conditioner is a combination sugar/sorbate solution for adding to a fermented wine in order to give it some residual sweetness. The sorbate helps prevent fermentation of the sugar that you are adding. Solution is 76-78° Brix.
Directions: Add to taste, usually up to 125ml (4 oz) per 23L (5 gal) of wine. Wine must be stabilized before adding sweetener.
Brewers make the tea but SCOBY makes the booch! Kombucha SCOBY is a symbiotic culture of bacteria and yeast that is used for fermenting sweet tea into kombucha. Fermentaholics' Jun SCOBY culture comes with a 4" pellicle and 12 fl oz of liquid starter tea. Perfect for starting a 1-gallon batch of homemade Jun tea.
Jun tea is considered the "champagne of kombucha", and has a crisper, brighter flavor profile compared to regular kombucha. Making Jun tea is the same process as making kombucha, but instead of feeding the culture black tea and cane sugar, you use green tea and raw honey.
With proper care and storage, you can reuse your culture for multiple batches. For short term storage, a clean, food grade container placed somewhere out of direct sunlight and left undisturbed is suggested. If you will not be using your SCOBY for an extended period of time, place it in a clean, food grade container in the refrigerator for up to 3 months. Feeding (adding new tea) as needed to keep the SCOBY from drying out.

This carboy thermowell is used in conjunction with a Digital Controller, FE601, FE601A, FE602, or FE611, to more accurately regulate internal temperature during fermentation. It is exceptionally useful during the start of fermentation when the lag between ambient temperature in the refrigerator and actual temperature in the carboy can vary greatly. Now you can keep your beer or wine within one degree of the set point on your digital controller. Designed to fit 3, 5,6, and 6.5 gallon glass smooth neck carboys, as well as 5 and 6 gallon plastic carboys, the unit comes with a 15" stainless steel thermowell and a carboy hood that will accommodate a standard airlock or 1/2 inch blow off tubing.
Will not work with the Analog Johnson Temperature Controller (FE600) because the probe is too large. This unit has been redesigned to work with 2016 Ranco Probes.
TIP: Carboy hoods are exceptionally useful for blowoff tubes. Just add 3' of 1/2" racking tubing into a bucket of water as your airlock.

This beer combines the richness of black malt with the old-world smokiness of Bamberg: a Franconian village that is at once worldly and yet devoted to its traditional ways. Brewed with an ale yeast, it mimics the origins of English porter, a beer made solely from brown malts dried over a direct wood fire. And since you'll never find a beer like this at your local liquor store, you'll have to brew it to appreciate the flavorful treats it can offer. With an astounding Two Pounds of Rauch Malt, any fan of smoked beers will fall in love with Ray's beer! Ray recommends British Ale yeast, WLP005.
Ray began brewing in 1989 after seeing a homebrew store ad at a Chicago hamburger shack. "The first batch was pretty good," he says, "but the second one was awful. Fortunately, I had already brewed the third batch before tasting the second, or that might have been the end of things. After tasting that beer, there was no looking back: I dove headlong into brewing and tasting and learning as much as I could about the art of brewing." That informaton was put together in his book, "Designing Great Beers", which has since become a must-have for any serious brewer. Over the years he has brewed more than 200 batches. When he started all-grain brewing in 1990 there weren't many options for buying mashing equipment, so he made his own 10-gallon vertical Coleman cooler Mashtun. More than 90 percent of the 200 batches he had made over the years were produced on the homemade equipment--although now the mash tun has been retired after some unsuccessful modifications a few years back.

Another brewer that got his start at home - Rodger has been a homebrewer since 1991, and a commercial brewer since 1996. After taking the Eight - week course at Sieble, Rodger was brewing at a few places in the Bay Area until he settled down at Drakes in 2002. Since then he has been keeping the awards and praises rolling into Drakes with their flagship IPA, which took Gold in 2002 at the Great American Beer Festival. Drakes Brewing has been around since 1989, and is one of the San Francisco Bay Area's oldest breweries. Their attention to detail and their commitment to making great beer is evident in each batch that rolls out of the brewery. Definitely another 'must' for any beer fan visiting the Bay Area. One of the best examples of a West Coast IPA that you can find on the market. It has a clean, crisp malt character backed by tons of hops - 6 additions in all! Somehow, the hops aren't too over the top and don't squash the malt as one might think from just looking at the recipe. This IPA is one that we have been asked to clone over the years, and we are excited to offer it straight from the brewers log book. Not over the top like some IPA's can be, Drakes is one beer to search for. Rodger recommends using White Labs California Yeast, WLP001.

Our Flander's Red recipe creates a beer that is deep red in color with a nice malt structure, this beer is based on those from certain regions of Belgium, and have distinct sour overtones to them. This is due to the wild spores that inhabit the air - and some breweries - of the area. While this would normally be a "bad" thing, the infection lends special tart and sour qualities unlike any other beer can. For a more traditional spin on this kit, try aging it on some oak cubes!
We recommend fermenting this beer with WLP001 California Ale for two weeks. Then add Wyeast 3763 Roeselare Belgian Sour Blend in the secondary fermenter bucket. This kit does require some special instructions, as it is a special beer. Once the gravity hits 1.015 - 1.020, rack the beer into a plastic bucket and pitch the sour blend tube. Age the beer at 65F-70F for 6 months, until the white cap that will form drops. The reason for the plastic bucket aging is so that tiny amounts of oxygen are allowed to be taken in by the plastic and come in contact with the beer. This micro-oxidation adds to the over all flavor of the beer itself.
Reminder: you will need to keep the equipment used to handle the beer after the sour blend is introduced separated from the rest of your brewing equipment, or clean and sanitize very well after use.
