Recommended Process for Use of Flask: Double Boiler Method It is important for your safety to heat water in the flask with a heat source that distributes heat evenly. Our manufacturer has confirmed that direct heat to the glass can break down its integrity and break if the heat source doesn't distribute evenly. Morebeer! recommends using the "double boiler method." This process involves using a boiling water bath on the outside of the flask to heat up the water inside the flask. All you need is a kettle 3 gallons or larger. This process is much safer and efficient. If the flask should break or boil over, your kettle will be there to collect the contents, thus keeping your stove clean and keeping you away from potential harm. This setup will reduce heat loss, meaning you'll get to boil faster and use less energy overall to maintain a rolling boil. When it's time to add hops, yeast nutrients, or other additions, simply remove the tri-clamp end cap and drop them in. (Use gloves, it will be hot!). With the new Pro Sight Glass Distillation Lid, the condenser can be attached directly to the 35L unit's 2" T.C. ferrule or to the 65L unit's 4" T.C. ferrule using a 4" x 2" T.C. reducer. The Pro Distillation Lid also features a 3" sight glass disc that can be removed to address foaming issues or to add hops or other boil additions. If you've brewed indoors before, you're probably familiar with how sticky the evaporation coming off the boiling wort can be. The gummy layer of film it can leave behind on your painted walls and ceiling is no fun to clean up. And if you've been considering how to incorporate a range hood in your brewery to deal with the steam, now there's no need! Simply attach the Steam Condenser Set and run your kitchen tap or garden hose to the Duotight-compatible inlet. From the inlet, water will enter the column via a special spray head which can condense 0.42 gal (1.6 L) per minute while connected to 100 psi mains water. You'll find that a super-fast flow rate isn't necessary to cool boiling steam into liquid. Unlike the distillation process where the distillate needs to be under a certain temperature so that ethanol doesn't evaporate from the liquid at a high rate, with boiling wort you just need enough flow to form the steam back into liquid. Simple! After the steam is reformed into liquid, it will drain out of the bottom barb where you can install 3/8" ID silicone tubing. Recapture that water in a collection vessel and save it for cleaning and sanitizing! Once again, be aware that the water coming out will be very hot. Caution: You will need to remove the Steam Condenser when you reach boil to manage the hot break and ensure you don't have a boil over when you reach boiling temperatures. Once you've completed that step, you can reattach the Condenser and leave it in place for the remainder of the boil. Warning: It is important that the output tube for this steam condenser is open to atmosphere. This will allow the condensed steam to exit freely. DO NOT put a valve on the liquid output or restrict the condensed steam in any way as this may cause your brewery to develop vacuum and implode or explode. DO NOT immerse the tube for the condensed steam in water. The outlet hose must be open to atmosphere and the drips of condensed steam must drip into your collection bucket freely.     Yeast Hulls are ususally the first action when you have a stuck or sluggish alcoholic or malolactic fermentation. Yeast Hulls are essentially dead yeast cells that absorb auto toxic yeast by-products that could be inhibiting your active yeast or ML culture from doing their job - finishing your fermentation! Yeast Hulls are then typically followed by Pro-Desert in the case of a stuck alcoholic fermentation or Acti Ml in the case of a stuck ML ferment. As a side note, Yeast Hulls are included in the Fermaid K mix of nutrients to help prevent problem ferments from the onset. The reason you would not use Fermaid K for most stuck ferments is that Fermaid K contains DAP. If DAP (Diammonium Phosphate) is added to the ferment past the point of metabolization by the yeast it could potentially leave an unwanted, residual flavor. Use at the rate of .5 to .9 grams per gallon. If stored in a cool, dry place, will last up to 3 years. A rough approximate of weight is 1 tsp = 2 grams. We highly recommend using a scale to weigh the product for an accurate dose. We do not recommend relying on these rough conversions for accurate dosage rates.

This Belgian Style Blonde, destined for a Brettanomyces fermentation was born! On a whim, the boys decided to have fun with it and add 1lb of California Golden Raisins per 5 gallons with the second dose of Brettanomyces. The sugars in the raisins ferment out completely and seem to be an excellent source of food for our ‘lil wild buddy's. The end result: A classic lambic that is as mild or as wild as you make it! This is a great base recipe for a Belgian Style Blonde Ale. Great body and mouthfeel balanced with a funky delicious sour edge. So have fun with this Lambic Recipe and make it your own! Tip: Patience, patience, patience. If brewing All-Grain, try mashing higher for some added body. (We recommend 156F.) Brettanomyces loves oxygen just as much, or maybe more than Saccharomyces spread the love! Use restraint with these critters, don’t add the whole kitchen sink. Experiment with one to two cultures per batch, at intervals, and preferably with a small amount of a new food source. Patience. CA Golden Raisins are an excellent food source! (ahem, hint hint!) Don’t disturb the fermentation vessel while the pellicle is formed. The pellicle provides protection from excessive oxidation over the long aging time. Patience.
