ICV-D80 was isolated by Dominique Delteil of the ICV in 1992 from the Cote Rotie area of the Rhone Valley. In addition to its' ability to enhance tannin structure, it's know for being able to ferment musts high in sugar and polyphenols. With proper nutrition, aeration and fermentation temperatures below 82 degrees F, ICV-D80 will ferment up to 16% alcohol. ICV-D80 brings high fore-mouth volume, big mid-palate mouthfeel and intense fine grain tannin to reds. It is one of the best strains for contributing big tannin volume in a blend. ICV-D80 is characterized by concentrated, dark fruit, smoke and a licorice finish. When blended with wines fermented with ICV-D254 or Syrah, wines fermented with ICV-D80 bring more tannin intensity to the blend. In short, this yeast is truly great for the structural support it can bring to a wine. However, if the winemaker is looking for highlighted fruit and ethereal top-notes as well, it often may not be the best choice when using a single strain in the vintage. Therefore, it may help to think of it as usually needing a companion strain to help bring everything to a finished wine. Renowned for its ability to enhance tannin structure. Produces flavors of dark fruit, smoke, and licorice. Perfect for reds grown in warmer climates or at lower elevations that need more backbone. High alcohol tolerance to 16%. Use 1 gram per gallon. Being bittered with Bravo hops helps to initially balance the malty backbone, but that bitterness fades quickly, providing a smooth transition into the complex flavors of four different character malts. This combination of Wheat, Carapils, Crystal 120L, and Chocolate malts create a rounded mouthfeel and chocolate flavor.

What is a Counter Pressure Filler? If you currently carbonate and store your homebrew in kegs, you can use a counter pressure filler to bottle beer directly from your kegs. One huge advantage of this method is that since you are bottling already carbonated, clear beer, there will be no sediment at the bottom of your bottles.
Counter pressure filling is how a brewery bottles beer. The bottle is under pressure while the carbonated beer flows in. Because the interior of the bottle is pressurized there is minimal loss of the CO2 in solution. The opposite of filling under pressure is when you pour a beer into a pint glass where CO2 erupts out of solution creating all that foam. Great in your glass but not good when you are trying to bottle carbonated beer. Our counter pressure filler mimics a single filling head on a professional bottling line, a concept that we all know works very, very well.
Features While some models flush the bottle from the top and fill from the bottom, our unit features a special valve that allows CO2 and beer to flow down the same stainless tube, directly to the bottom of the bottle. First CO2 flows down into the bottom of the bottle to flush from the bottom up. Next you switch the valve position and beer flows down the same tube, filling from the bottom up. The result is a more effective purging of oxygen and no foam during the filling process - not to mention that the whole thing takes one-hand to operate! Why hope that you flushed your bottle properly using a type of beer gun, when you can know for sure that you have created the best environment for your beer to be stored at by using a Counter Pressure Bottle Filler?
More Details
The unit is inserted into the bottle in the off position. The valve is then turned to CO2 to flush the bottle and then to beer for filling. The adjustable pressure relief on the side of the unit allows you control the speed of fill by adjusting the pressure in the bottle. The valve is positioned in such a way that it is easy to use with one hand, while the other holds the bottle. This model is designed for 12oz bottles but can easily be extended to accommodate larger bottles, such as 22oz, with a small piece of 1/4" tubing.
Setting Your PSI Pressure
Before you counter pressure fill a bottle make sure you are satisfied with the carbonation level and flavor. The goal for counter pressure bottle filling is to store your beer in the most sanitary and clean environment possible so when you get ready to share your homebrew its presentation is perfect when you go to pour.
An ideal set point to set your PSI level on your regulator is 10-14 psi. This range is dependent upon the temperature of your beer and the carbonation level. We recommend you start at a lower pressure around 10psi for the first 2-3 bottles to make sure you get everything dialed in before committing to filling a whole case.
Make sure your keg is always kept cold. If your keg warms up you will have foaming issues.

The Deluxe Yeast Starter Kit will have you making top shelf yeast starters right out of the box. Yeast starters offer higher cell counts at the time the yeast is pitched, leading to faster, healthier fermentations and better tasting beer! Any beer will benefit from a yeast starter, but they're especially recommended for high gravity beers and cold fermenting lagers.
This kit includes step-by-step instructions for making a 2L starter, as well as some fantastic upgrades that set it apart from our standard Y320 starter kit. Once you've prepared the starter, sanitize and drop in the stir bar, install the foam stopper, and place the flask on the magnetic stir plate. Turn the dial up until a shallow vortex forms.
Magnetic Stir Plate
A stir plate will greatly improve the quality of your yeast starter by providing continuous aeration. Yeast need oxygen to produce sterols and multiply. When all the available oxygen is used up the yeast will stop reproducing. Using a stir plate will ensure that your yeast have all the oxygen they could ever want and they'll be able to reproduce as much as possible.
Foam Stopper
Many yeast starter kits include a rubber stopper and airlock, but we believe a foam stopper is the clear choice. The foam stopper will allow air to flow freely into your flask while keeping pesky bugs and other contaminants out. Simply spray or dunk the stopper in sanitizer before installing it. If you're going to store the starter for a couple days after its finished, remove the foam stopper and cover the flask with sanitized aluminum foil.
Foam Axe
Foam Axe from CellarScience® is a uniquely formulated anti-foaming agent which reduces surface tension so bubbles are Axed before they can form. Foam Axe can be used in the kettle to help prevent boil-overs and works great in your fermenter or starter flask to reduce Krausen—stopping your viable yeast from fermenting out the top of your vessel. Just one drop in your flask is all you need.
Flask Marker
This wax pencil is used for writing on glass surfaces and washes off easily. Great for labeling and writing notes on your yeast starter.

In the lab world, these flasks are known as "Student Grade". A great flask for making yeast starters! (Student grade is not the highest grade flasks and will have minor defects)
Wine Making
Use Delvozyme (Lysozyme, Lysovin) for controlling lactic acid bacteria growth in your wine. Isolated from egg whites, this enzyme will degrade the cell wall of gram positive bacteria, but will not affect yeast or gram negative bacteria such as Acetobacter. Delvozyme can be used for both Red and White Wine Malo Fermentation.
Dosage:
To Delay Malolactic Fermentation: Red Wine - add to grapes at 100 - 200 ppm, or 0.38 - 0.76 grams per gallon. White Wine - Add to must at 200 - 300 ppm, or 0.76 - 1.14 grams per gallon.
To Block Malolactic Fermentation: White Wine - Add to must or wine at 300 - 500 ppm, or 1.14 - 1.90 grams per gallon.
Stabilizing wine after MLF is complete: Add to barrel during storage at 250 - 500 ppm, or 0.95 - 1.90 grams per gallon.
When blending partial and complete MLF wines: Add immeditatley after blending at 300 - 500 ppm, or 1.14 - 1.90 grams per gallon, to reduce the risk of further malolactic fermentation (MLF). Within several days any lactic should expire.
For sluggish or stuck yeast fermentation: Red Wine - Add at 150 - 400 ppm, or 0.57 - 1.52 grams per gallon. White Wine - add at 300 - 500 ppm, or 1.14 - 1.90 grams per gallon.
Directions for use: You can make a 10% solution of Delvozyme in water (100 grams per liter of water). However we find the easiest method is to add the desired dry weight of Lysovin in 5x its weight of warm(tepid) water. Mix for one minute, allow this mixture to stand for 45 minutes and add to must, juice or wine while mixing well. Allow 24 - 48 hours for reaction to complete.
**Note: 3tsp Delvozyme = 5g
Beer Making
Delvozyme can be used in beer making as well. Use either in the starter (recommended if you make starters) or when pitching (adding) the yeast to the wort, do not use over 140 F. Recommended dosages is 1 tsp per 5 gallons of wort. According to studies it has no effect on flavor or clarity.
Storage: Should be stored at room temperatures in a dry environment, can be stored up to 5 years.
Otherwise known as Raw Sugar, Demerara sugar is about 97% sucrose, so most of it will ferment out, and will not impart much to the body of your beer. Generally used in darker beers, as the light brown color of the sugar will affect the color of your beer.
The big mama jamba brush for cleaning those Demijohns. If you have a Demijohn, especially a narrow mouth model, you will need this 37 in long overall dirt buster. Bristles are 17 in long x 2-3/4 in wide. Features plastic handle with hook and hole for hanging. Tip of the brush has a slight curve to better fit demijohns and containers with a rounded bottom.
