Cool Features
Torpedo Kegs were designed to stack with Ball Lock quick disconnects in place and serving which is a cool feature for some brewers who have vertical space in their refrigerator. We also like the rolled stainless steel handles. They are comfortable to grab and will never come off like some rubber handles can over time. “In” and “Out” is etched near the keg posts for easy identification which is very handy when you are connecting lines in a refrigerator or kegerator and trying not to make a mistake.
Low2 Keg Lid O-ring
Give your beverage the absolute best protection from oxygen staling with the Low2 keg lid O-ring. Even the most perfectly sealed keg is susceptible to oxygen ingress through the hatch O-ring—yes, even if the keg is under constant pressure with CO2! Even a leak-free, pressurized keg will release CO2 molecules as they pass through the lid O-ring itself, and conversely, Oxygen molecules will permeate through the O-ring and diffuse into the keg when they reach the surface area on the other side. The level of permeability is wide ranging and highly dependent on what material the O-ring is made from. Rather than the usual EPDM or Silicone, Low2 gaskets are made from a unique composition of Synthetic M-Class and Cross-Link Elastomers. 4.3 °L - Viking Malt - Viking Smoked Malt is produced from 2-row spring malting barley, null-LOX variety. The flavors of these malts are as with pilsner malt with rather strong smoky flavor depending on type of wood used for smoking. Viking uses apple, beech, cherry, sweet cherry and pear wood delivered from ecological, clean areas. Due to relatively low processing temperatures, enzymatic activities and other good brewing properties are maintained.
In brewing, Smoked Malt can be considered as pilsner malt with a special aroma as Smoked Malt's flavor and taste profile is not too overwhelming.

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.
4.3 °L - Viking Malt - Viking Smoked Wheat Malt is produced by using the oak from the unique, natural areas located in the north-east of Poland. These are called “Polish Green Lungs”. Smoke from oak gives the malt specific and delicate aroma. Due to relatively low processing temperatures, enzymatic activities and other good brewing properties are maintained.

This beer combines the richness of black malt with the old-world smokiness of Bamberg: a Franconian village that is at once worldly and yet devoted to its traditional ways. Brewed with an ale yeast, it mimics the origins of English porter, a beer made solely from brown malts dried over a direct wood fire. And since you'll never find a beer like this at your local liquor store, you'll have to brew it to appreciate the flavorful treats it can offer. With an astounding Two Pounds of Rauch Malt, any fan of smoked beers will fall in love with Ray's beer! Ray recommends British Ale yeast, WLP005.
Ray began brewing in 1989 after seeing a homebrew store ad at a Chicago hamburger shack. "The first batch was pretty good," he says, "but the second one was awful. Fortunately, I had already brewed the third batch before tasting the second, or that might have been the end of things. After tasting that beer, there was no looking back: I dove headlong into brewing and tasting and learning as much as I could about the art of brewing." That informaton was put together in his book, "Designing Great Beers", which has since become a must-have for any serious brewer. Over the years he has brewed more than 200 batches. When he started all-grain brewing in 1990 there weren't many options for buying mashing equipment, so he made his own 10-gallon vertical Coleman cooler Mashtun. More than 90 percent of the 200 batches he had made over the years were produced on the homemade equipment--although now the mash tun has been retired after some unsuccessful modifications a few years back.

This beer combines the richness of black malt with the old-world smokiness of Bamberg: a Franconian village that is at once worldly and yet devoted to its traditional ways. Brewed with an ale yeast, it mimics the origins of English porter, a beer made solely from brown malts dried over a direct wood fire. And since you'll never find a beer like this at your local liquor store, you'll have to brew it to appreciate the flavorful treats it can offer. With an astounding Two Pounds of Rauch Malt, any fan of smoked beers will fall in love with Ray's beer! Ray recommends British Ale yeast, WLP005.
Ray began brewing in 1989 after seeing a homebrew store ad at a Chicago hamburger shack. "The first batch was pretty good," he says, "but the second one was awful. Fortunately, I had already brewed the third batch before tasting the second, or that might have been the end of things. After tasting that beer, there was no looking back: I dove headlong into brewing and tasting and learning as much as I could about the art of brewing." That informaton was put together in his book, "Designing Great Beers", which has since become a must-have for any serious brewer. Over the years he has brewed more than 200 batches. When he started all-grain brewing in 1990 there weren't many options for buying mashing equipment, so he made his own 10-gallon vertical Coleman cooler Mashtun. More than 90 percent of the 200 batches he had made over the years were produced on the homemade equipment--although now the mash tun has been retired after some unsuccessful modifications a few years back. You may now know Ray as the founder of the highly successful Cicerone Program which certifies and educates beer professionals.

Made from White Sorghum Grain
Provides a mild flavor and light body

Sorghum is gaining popularity as a complete malt substitute in beer. Coeliacs (people allergic to gluten) have to avoid items with gluten in them, including beer. Substituting Sorghum extract for malt extract opens a whole new brewing door for people.
It is mild in flavor, light in body (2-3L). One pound per one gallon of water will yield 1.040 SG. We have experimented with this extract, and have found the flavor of sorghum is not like malt at all. It has a light spicy note to it, and the mouthfeel is virtually non-existent. These two things make brewing with 100% Sorghum a nice little challenge. While the result is a drinkable beer, it needs some work. We suggest trying Heather Tips, Honey, Belgian Candi Syrup, and to stay away from "citrusy" hops. You use about 50% less hops when bittering sorghum extract.
There are some ingredients that cannot be used in brewing a beer for a person who is allergic to gluten such as specialty grains, malt, liquid yeast and dextrin. If you're allergic to gluten, be sure to check with your doctor before deciding which ingredients are safe for you to use in your beer.

The maple syrup and oak chips are added to simulate the barrel-aging process used for making Founders Canadian Breakfast Stout®, or "CBS". The result is a deeply complex stout that would have Bob and Doug McKenzie swearing off Elsinore beer after one sip. Not to cause a kerfuffle, but patience is key when brewing Sorry Aboot Brunch Stout. We recommend conditioning the beer for 2 to 6 months after the oak chips are added. Best enjoyed in your favorite tuque with a box of Timbits.

Brewed for the first time in 2010 in our parking lot at the annual July 15th Showroom Sale, we decided to experiment with another sour. This Belgian Style Blonde, destined for a Brettanomyces fermentation was born! On a whim, the boys decided to have fun with it and add 1lb of California Golden Raisins per 5 gallons with the second dose of Brettanomyces. The sugars in the raisins ferment out completely and seem to be an excellent source of food for our ‘lil wild buddy's. The end result: A classic lambic that is as mild or as wild as you make it!
This is a great base recipe for a Belgian Style Blonde Ale. Great body and mouthfeel balanced with a funky delicious sour edge. So have fun with this Lambic Recipe and make it your own!
Tip: Patience, patience, patience. If brewing All-Grain, try mashing higher for some added body. (We recommend 156F.) Brettanomyces loves oxygen just as much, or maybe more than Saccharomyces spread the love! Use restraint with these critters, don’t add the whole kitchen sink. Experiment with one to two cultures per batch, at intervals, and preferably with a small amount of a new food source. Patience. CA Golden Raisins are an excellent food source! (ahem, hint hint!) Don’t disturb the fermentation vessel while the pellicle is formed. The pellicle provides protection from excessive oxidation over the long aging time. Patience. Use excellent sanitary methods when working with our wild lil buddy’s to ensure a clean brewhouse. Try adding any local fruit as a food source for the bugs and wild yeasts. They love it! Patience!

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

IREKS Sour Malt, also known as acidulated malt or saurmaltz, with its natural lactic acid content of up to 4.5% is an excellent solution for precisely adjusting mash pH. Compared to typical sour malts, IREKS contains roughly double the lactic acid, allowing you to use as little as half the amount to achieve the same results. This optimization directly supports enhanced enzyme activity, leading to a higher brewhouse yield.
The ideal addition rate of IREKS Sour Malt will vary for each brewery. Factors such as brewing water quality, mashing schedule, and grist composition all influence the precise amount needed for optimal results.
Comparable to Weyermann Acidulated Malt, but IREKS Sour Malt has a much higher lactic acid content of up to 4.5% rather than the 1-2% of the Weyermann. IREKS Sour Malt is able to achieve the same pH adjustment with less usage in the overall grain bill.

Considered to be Spain’s noble grape, Tempranillo is a black grape variety known for producing an assortment of delicious wines that can range from complex and refined to dense and assertive. Although it can be found around the world, from Argentina to California, its most esteemed examples of Tempranillo still hail from its native country of Spain.
The VineCo Tempranillo is an elaborate medium-bodied red wine with flavors of red cherry and strawberry intermingled with hints of smoke and a moderate oakiness. This dry red wine boasts a relatively strong alcohol content at 13% by volume. The Tempranillo wine kit includes medium toast oak chips. Medium toast oak is the most popular toast level used in red wines as it imparts a complex balance of vanillin and spice along with a subtle oakiness. The oak chips also help build body and mouthfeel.
