MoreBeer! is proud to release this Black IPA recipe designed by our local homebrew Club D.O.Z.E.
After winning the AHA Homebrew Club Of The Year in 2010, the Diablo Order Of Zymiracle Enthusiasts (DOZE) put their minds together to collectively craft a beer they felt representative of the club and its brewers. The initiative was taken on as an all club project that spanned 5 months. In the end, over 50 members contributed ideas to this recipe and nearly 40 individual batches brewed by 23 DOZE members were tasted and refined to a single recipe. This beer is inspired by the style many refer to as Cascadian Dark Ale or Black IPA, however it is not intended to fit the mold of any particular guideline. Mostly it is big, dark, hoppy, and delicious.
The recipe was coined 'Diablo Dark Ale' in honor of our near by Mt. Diablo. Members of the Diablo Order of Zymurical Enthusiasts live in various cities located at the base of this great mountain. Also the location where many of us from MoreBeer! go mountain biking when we get the chance.

An extremely malty beer that really emphasizes malt over hops. Most styles are more balanced, which means the bitterness of the hops is proportional to the sweetness of the malt. Not true with our Scotch ale where the deep malt flavor is king. Scotch Ale yeast strains typically ferment well in the low-to-mid 60's and leave behind very few esters or fruity flavors, which further emphasizes the malt. This recipe has over 11 lbs of malt extract and only one ounce of hops!

Jamil brews more, consistently high-quality beer than any hombrewer we know. He won California Homebrewer of the Year in 2002, after winning over 150 total awards at brewing competitions, 55 of them being First Place. Of all the beers that he brews, the Chocolate Hazlenut Porter (CHP, as Jamil says) is the cult favorite and the recipe he is asked for the most. It also won Best of Show 2002, several First Place ribbons, and countless other awards. It comes complete with 25 ml of Hazlenut extract and 4 oz of Cacao Nibs. Jamil recommends using California yeast, WLP001. This kit has a lot of grain in it, so you may find two grain bags useful.

Cloudburst Brewing in Seattle Washington is one of our favorite craft breweries. We met Steve Luke (owner and head brewer) up at the Yakima Fresh Hop Ale Festival and were thoroughly impressed with his beer. After tasting every beer at the festival, there was no question that the Cloudburst Wet Hop IPA was best in show.

Charlie Essers (AKA Push Eject) has been a longtime friend of MoreBeer, The Brewing Network, and homebrewers in general. Dubbed "one of the nicest guys in homebrewing" by those who know him, Push wanted us to have this recipe that he brews whenever his father-in-law comes for a visit. Push says: "My family has been supportive of all the brewing gadgets and scattered projects including my "dark-beer-phobic" father-in-law. This recipe is an Americanized pilsner that I have evolved for him over the years. Sweeter than a standard pilsner, but still crisp and refreshing, I can't keep this around long in the Summer months." Push began brewing in 1999 after buying a starter homebrew kit as a bad joke for a friend who earned a DUI and getting one for himself as well on impulse at the register. After going all grain in 2002, it was clear that automation was a necessity in his process, and his love of brewing gadgets was born. His first stand was designed and built in 2003 and his first Wort-O-Matic control panel in 2006. These led to the launch of wortomatic.com and a close relationship with MoreBeer! and The Brewing Network. Jonathan Plise has been making beer since the year 2000. He then spent the next few years researching and developing his recipes, fermentation regimen, and sanitation - Jonathan's most dramatic improvements came when he learned about oxygen and yeast starters. Jonathan became a famous homebrewer starting in 2005 when he recieved 33 awards for his beers, including several at the National Homebrewers Competition. He has also won California Homebrewer of the Year.

The Northern Brewer hops impart a nice, but not overpowering, bitterness.
This recipe was designed by Regan Dillon, original MoreBeer! partner, whose favorite beer style was Porter. Let us tell you about the inner workings of this bomb. Sure it has big IPA malt, but you want to know about the hops. It starts with an unreasonable amount of Simcoe®, Columbus, and Centennial hops. By themselves these are all explosive hops, but together they combine to bring true, huge IPA hop flavor. Because of the similarity of hops, one MoreBeer! staffer dubbed it a mini "Pliny The Elder... but with orange". High praise indeed.
Did you just say Orange? Well done sir, good paying attention. What really sets this IPA apart from the masses is that the recipe calls for you to cut up and add three fresh oranges into the fermenter. Crazy? We thought so. But that is what we love about our Signature Series of Beer Kits, a selection of crazy, unique beers that really stand out. M-80 IPA was designed and created by your fellow homebrewer, Carlos Musquez. We do admit he went a little AWOL on this kit and into uncharted territory, but we love a rebel.

Janet’s Brown Ale is the recipe for which Mike won the 2004 National Homebrew Convention gold medal in its category. Bubbling Crude, Black Gold, Texas Tea - you may not strike oil in your backyard, but you can make Imperial Stout at home. With a texture and color similar to black crude oil, this monstrous, thick, chewy beer takes a minimum of six months to age out. The foundation of the beer is 12 lbs of malt extract. Then we throw in some Crystal, Chocolate, Roasted Barley, and Black Patent malts. Yes, there are two additions of hops in this recipe but you probably will never taste them through all that malt flavor. This is a great beer for sipping in front of the fire. Will age for years, eventually gaining some Port-like flavors.

Another brewer that got his start at home - Rodger has been a homebrewer since 1991, and a commercial brewer since 1996. After taking the Eight - week course at Siebel, Rodger was brewing at a few places in the Bay Area until he settled down at Drakes in 2002. One of the best examples of a West Coast IPA that you can find on the market. It has a clean, crisp malt character backed by tons of hops - 6 additions in all! Somehow, the hops aren't too over the top and don't squash the malt as one might think from just looking at the recipe. This IPA is one that we have been asked to clone over the years, and we are excited to offer it straight from the brewers log book. Not over the top like some IPA's can be, Drakes is one beer to search for. Rodger recommends using White Labs California Yeast, WLP001.

Belgian ales are really about creating a simple yet elegant malt base upon which the unique Belgian yeast strains can create their wonderful, complex flavors. This Belgian Ale is their equivalent of our pale ale in alcoholic strength and body. The difference is that the hops are very subdued and only complimentary where as in many American beers hops can create a majority of the flavor profile. One is not better than the other just different, and we love diversity in beer.
Terms used to describe Belgian Ales include phenolic, fruity, with the occasional clove, plum, and banana flavors coming through. Sometimes you just have to try one to understand. In the Dubble and Triple you will have some higher alcohol flavors coming through. This version is less alcoholic and highly drinkable.
Any of the four Belgian yeast strains that we carry from Whitelabs could be used in any of the Belgian recipes. They are all excellent in their own right. The malt extract for this kit is made entirely from our German Pilsner Malt, giving it authentic European flavor. We use turbinado sugar to help up the alcohol and dry out the beer during fermentation.
The extract version of this kit does NOT include grains. Most of the flavor from this beer is derived from the yeast and fermentation.

This beer combines the richness of black malt with the old-world smokiness of Bamberg: a Franconian village that is at once worldly and yet devoted to its traditional ways. Brewed with an ale yeast, it mimics the origins of English porter, a beer made solely from brown malts dried over a direct wood fire. And since you'll never find a beer like this at your local liquor store, you'll have to brew it to appreciate the flavorful treats it can offer. With an astounding Two Pounds of Rauch Malt, any fan of smoked beers will fall in love with Ray's beer! Ray recommends British Ale yeast, WLP005.
Ray began brewing in 1989 after seeing a homebrew store ad at a Chicago hamburger shack. "The first batch was pretty good," he says, "but the second one was awful. Fortunately, I had already brewed the third batch before tasting the second, or that might have been the end of things. After tasting that beer, there was no looking back: I dove headlong into brewing and tasting and learning as much as I could about the art of brewing." That informaton was put together in his book, "Designing Great Beers", which has since become a must-have for any serious brewer. Over the years he has brewed more than 200 batches. When he started all-grain brewing in 1990 there weren't many options for buying mashing equipment, so he made his own 10-gallon vertical Coleman cooler Mashtun. More than 90 percent of the 200 batches he had made over the years were produced on the homemade equipment--although now the mash tun has been retired after some unsuccessful modifications a few years back. You may now know Ray as the founder of the highly successful Cicerone Program which certifies and educates beer professionals.

Designed as a clone of the highly sought-after Ballast Point Sculpin® IPA, the Ugly Fish IPA is a hop masterpiece. This beer starts with a very clean bitterness from Warrior® hops, and finishes with a beautiful blend of Cascade, Simcoe®, and Chinook late additions. With almost 10 ounces of hops, the Ugly Fish IPA is definitely a hop forward beer, but does have a solid malt profile that stands up to those hops and helps to keep it reasonably balanced.

Maybe you have heard of John Palmer? His best selling "How to Brew" is the default homebrewing text. John gave us this recipe early on and it has always been a special recipe. John describes his kit as: "a smooth, copper lager that strikes the perfect balance between a toasty sweet malt body and the noble overtures of the hops. This interpretation of the Vienna style has more hop flavor dancing around the edges than the current BJCP guidelines specify, but the hop profile really complements the rich malt palate for a lively complexity that you don't get from the hoppier Bohemian Pilsener or maltier Oktoberfest styles, and is richer and smoother than Dortmunder Export." You now know JP as a host on the Brewing Network, but before the Brewing Network JP was an original employee at MoreBeer! where his first job was cleaning up an infamous and massive malt extract spill Olin caused while taking and filling orders at the same time. Because JP tends to get really good boilovers when he brews he usually makes high gravity beers whether he intends to or not. It may have something to do with consumption while brewing, not that any of us know anything about that. The result is always a starting gravity that is higher than anticipated. We put the beer on tap in the shop and it got rave reviews. It was both outstanding and unique. Sometimes things do happen for a reason! The beer can easily be described as a Porter on steroids. Brewed for the first time in 2010 in our parking lot at the annual July 15th Showroom Sale, we decided to experiment with another sour. This Belgian Style Blonde, destined for a Brettanomyces fermentation was born! On a whim, the boys decided to have fun with it and add 1lb of California Golden Raisins per 5 gallons with the second dose of Brettanomyces. The sugars in the raisins ferment out completely and seem to be an excellent source of food for our ‘lil wild buddy's. The end result: A classic lambic that is as mild or as wild as you make it!
This is a great base recipe for a Belgian Style Blonde Ale. Great body and mouthfeel balanced with a funky delicious sour edge. So have fun with this Lambic Recipe and make it your own!
Tip: Patience, patience, patience. If brewing All-Grain, try mashing higher for some added body. (We recommend 156F.) Brettanomyces loves oxygen just as much, or maybe more than Saccharomyces spread the love! Use restraint with these critters, don’t add the whole kitchen sink. Experiment with one to two cultures per batch, at intervals, and preferably with a small amount of a new food source. Patience. CA Golden Raisins are an excellent food source! (ahem, hint hint!) Don’t disturb the fermentation vessel while the pellicle is formed. The pellicle provides protection from excessive oxidation over the long aging time. Patience. Use excellent sanitary methods when working with our wild lil buddy’s to ensure a clean brewhouse. Try adding any local fruit as a food source for the bugs and wild yeasts. They love it! Patience!

Bourbon Belle takes the beautifully complex flavor of Brunch Stout and adds a charming southern drawl. Similar to "All Out", this recipe combines a variety of dark malts, cacao nibs, and ground coffee for a remarakably rich flavor profile, and then adds a little giddy-up with an addition of bourbon-soaked oak chips. The oak chips are added to simulate the barrel-aging process used for making Founders Kentucky Breakfast Stout®, or "KBS". You wouldn't expect a foal to win the Triple-Crown, so practice patience when brewing Bourbon Belle. We recommend a conditioning period of 2 to 6 months to allow this beer to fully mature before entering the race.
Please note: this recipe calls for 2 oz of Kona and Sumatra coffee grounds and 1 cup of Kentucky Bourbon, which are not included in the kit.

An extremely malty, copper colored beer. A lager requiring cold fermentation in the 48 to 58 degree range. The hop flavor is subdued in favor of the rich maltiness. Let it age for about six months at lagering temperatures, but it will be ready to drink after only one month. Higher in alcohol. The malt extract for this kit is made entirely from German Pilsner Malt, giving it that classic European flavor.

Mike is one of the best homebrewers we’ve ever known, and one of our original customers way back when the entire MoreBeer! operation fit inside a storage shed. Aside from brewing many award-winning beers, Tasty helped grow homebrewing as a hobby, and as a community, here in the Bay Area and well beyond.
Mike's American Amber Ale earned him multiple 1st- and 2nd-place ribbons, including a Gold Medal at the National Homebrew Competition. We were after him for awhile for this recipe and he finally gave his consent, allowing this to be the 11th entry into MoreBeer!'s lineup of Signature Series kits. With a sturdy backbone of malt extract and steeping grains and 4 rounds of hop additions, this is a full-bodied, hop-forward beer. When it comes time to drink this beer, raise one for Tasty!

We would not have put 3 lbs of honey with 4.5 lbs of malt extract in a pale ale, but Jim had no fear and did just that. The result - a really nice mix of malt and honey flavors. There is enough honey to make it through into the flavor. Just a little Cascade hops in the beginning and finish keep the flavor emphasis on the honey. He suggests WLP002 because it is less attenuative and leaves more malt behind.

Phil created this recipe in an effort to stop his long, slow spiral into fruity, phenolic, sour beers that began to populate his fermenters and kegs back in 1998. Honestly, Phil seriously contemplated throwing gummy bears into his brew and realized it was time to step back, look around, sober up, and grab a classic West Coast pale ale.
This beer is dominated by the wonderful Amarillo® hop that is known for having a citrus/orange flavor. The Left Coast Pale has been brewed many times over as a house favorite during the Fermentation Frenzy shop era (Los Altos, CA circa 1997-2007). Try it, you'll like it. And, unfortunately, so will your friends.
Phil recommends for an even more pronounced hop nose and flavor you add an additional 1oz of Amarillo® hops to the fermenter as a dry hop addition (not included with kit).
