By changing the amino acid mix you feed your yeast you can influence the final flavors yeast produce. To understand why, we have to first explain the Ehrlich pathway which was discovered over 100 years ago by German Biochemist Felix Ehrlich. Yeast absorbs and breaks down a specific set of amino acids very slowly over the course of fermentation. The yeast cells incorporate the amino group into their cell structure, leaving an alpha-keto acid. This acid is turned into fusel alcohol by the yeast and then returned back out into the wort. This production of fusel alcohols via the breakdown of specific amino acids is called the Ehrlich Pathway. For Beer Fusel alcohol may scare you as a brewer... we get it, you are trained to avoid these! But certain fusel alcohols actually have a really positive effect on the final beer flavor. The idea behind CellarScience Tropic Thunder is we have selected specific amino acids that when fed to your yeast will result in the production of a small amount of fusel alcohols that contribute to the tropical flavors of mango, pineapple, and coconut. Tropic Thunder nutrient is often used to help create complexity in hazy IPA, but feel free to use it in any style where tropical flavors would be welcome—you are only limited by your imagination! When used in beer, Tropic Thunder can replace your typical yeast nutrient as it is itself an organic, DAP-free nutrient. If you typically use a complex nutrient that includes DAP, you can continue to add it separately as normal. For Wine Tropic Thunder is perfect for Sauvignon Blanc, Viognier and other select styles where tropical fruit flavors are part of your vision. Ripe honeydew, papaya and tropical melange, white peach and fleshy pear. Vista hops are the most recent release from the USDA public breeding program. The public hop breeding program is unique in that it exists to broadly benefit the entire hop and brewing industries, whereas private programs look more at explicit private financial gain. The USDA public breeding program bred the genetic hop base on which American craft beer was built: Cascade, Centennial, Cluster. And continues to innovate to adapt towards new DDH hazy, juicy IPA brewer and consumer preferences with releases like Cashmere, Triumph, and now Vista. There’s a lot to brewing. Although it’s relatively simple to learn, it can take a lifetime to master, and with all the different yeast, malts, hops, and specialty versions of each it can get more than a little complicated. Do you need to refrigerate the ingredients until brew day? +

The yeast is the most important ingredient to refrigerate once you receive your order. Hops should be refrigerated after a couple days if they're left out at room temp. Hops can be frozen and will last for 2-3 years still preserving their freshness. Malt extract should be left at room temperature until brew day up to 1-2 weeks. Liquid Malt Extract can can be refrigerated but will become rock solid which requires a hot water bath to thaw out or 24 hours at room temp to re-liquify. Dried Malt Extract should be stored at room temperature. Any grains in a paper bag should be used within 2-3 days for optimum freshness especially if they are pre-milled. Grain stored in plastic bags will last a couple months un-milled. We suggest double bagging to prevent oxidation.
