To install the spigot you will need the installation tool (FE311A) to hold the nut in place as you thread in the spigot. Your days of lugging heavy glass carboys around are over thanks to these plastic carboys! Our Plastic Carboys are made from 100% Virgin PET plastic, which is far more resistant to oxygen than regular plastic. They’re much lighter and safer than glass, which is good if you need to move your fermenter around the house to find the right temperature. Full carboys can be heavy and hard to maneuver and glass can break resulting in possible injury. In addition to being safer to handle, they’re more economical than glass as well. With no ribs on the sides, there’s no place for yeast and sediment to collect, making cleaning a breeze. We suggest cleaning them with an overnight PBW soak, shake, rinse, and sanitize. You’ll want to avoid vigorous scrubbing during cleaning to avoid scratches. Two special features we love about our PET Carboys are the punted base and extra head space. The punted base makes the carboy easier to hold while carrying or pouring, and prevents sediment disturbance during transfers. We recently had a simple, yet exciting idea: What if we brewed the same recipe, used the same yeast, but changed one thing - the flavor, aroma, and dry hop additions using one hop varietal. That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: Ultralight malt extract, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. The malt in this recipe is basic and fairly neutral, the bittering clean and consistent, but the flavor and aroma from the late hop additions will vary; sometimes dramatically! Consistent, repeatable results without the need for kettle souring. ACID from CellarScience is a naturally selected, GMO-free yeast strain that has the ability to ferment and sour beer simultaneously. In a traditional kettle souring process, you'll need to pre-boil wort, purge it with CO2, pitch lactic acid, wrap and seal the kettle, and insulate or provide a heat source to maintain lactic acid fermentation temps that may be as high as 100°F+ depending on your chosen pitch. ACID allows brewers to bypass those steps and produce sour beers with the equipment they already own. Pitch directly in your fermenter and ACID yeast will complete both Lactic and Alcoholic fermentation on its own. When allowed to run its course, this yeast produces a rounded, refreshingly acidic beer with light notes of fruity floral esters.
If you wish to reduce acidity, simply pitch a regular ale yeast strain when the desired pH is obtained which will hault souring and complete the rest of the alcoholic fermentation.

Direct Pitch or Rehydrate:
ACID yeast is designed to be sprinkled directly onto the surface of your wort with no oxygenation required in the initial fermentation. Our aerobic growth process makes this possible by creating dry yeast with high viability and high sterol levels. ACID yeast is pre-loaded with essential nutrients to ensure a successful, complete fermentation. While not required, some brewers prefer to rehydrate yeast. To hydrate yeast, first, sanitize the yeast brick and scissors. Use 10 grams of sterilized tap water between 85-95°F (29-35°C) mixed with 0.25 grams of FermStart per gram of yeast. Sprinkle yeast on the water. Allow the slurry to stand undisturbed for 20 minutes, then swirl. Use small amounts of wort to adjust to within 10°F (6°C) of wort temperature before pitching. This Mini CO2 regulator uses 74g cartridges for convenient mobile draft dispensing Dial in your ideal serving pressure just as you would with your standard regulator A portable mini-regulator with all the features of a full sized regulator! Perfect for parties and gatherings where you don’t want to haul around a large canister and hoses. A lot of great features packed into a very small package. The regulator has a range of .5-1.5 bars (7-21 psi). This means that, unlike a button-activated CO2 injector that shoots in CO2 at a fixed pressure, the mini-reg allows you precisely dial in pressure and keep it there. It utilizes a disposable 74 gram CO2 cartridge, which is the largest size that can be shipped full. This is a two stage mini-regulator, meaning that it takes the pressure down from 800 psi (cartridge pressure) to a lower pressure and then to your set pressure of around 10 psi. 20cm x 20cm filter pads made for 20x20 plate filters. 11 micron pads are considered to be a "rough" filtration and are typically used to prepare the wine to be filtered by finer pads, usually either 2-3 micron or 1.5 micron depending on the winemaker's tastes and objectives. Please note that all pad filters are rated 'nominal', meaning that about 90-95% of all particulate matter at the micron rating will be filtered out. There will always be a little bit of smaller material that is also filtered out, as well as some larger material that will make it through.
The filters can be sterilized by in-line steam, auto-claving, dry heat, hot water or chemical methods. We choose to run Saniclean solution through the pads followed by sterile water or a small amount of wine that is then discarded. After the solution is run through the pads, and the pads have softened, the filter will need to be re-tightened.
Each pad has an entry side and an exit side, distinguishable by their different textures. The entry side is a billowy type texture, frequently called the "rough" side; and the exit side has a crosshatch pattern and is commonly called the "smooth" side. Enzo Red contains a selection of enzymes designed to promote deep, lasting color, structure, and aroma in fine red wines. Enzo Red is a blend of pectinases that will degrade both cellulase and hemicellulase, releasing anthocyanins and desirable skin tannins. It also releases aromatic compounds along with polysaccharides to help contribute to the aroma and body of your red wine.
By breaking down pectins, Enzo Red helps with faster clarification and easier downstream filtering.
Enzo Red can help to reduce the amount of punch downs or pump overs required. While there is no harm to keeping your existing schedule, it reduces the need for extended skin contact time, helps with extraction when an ideal punch-down schedule can't be maintained, and lessens the amount of time spent in pump over. For pump over in particular, this can be an advantage by lessening the shearing action on seeds that can occur when pumping must.
Enzo Red is obtained from aspergillus niger and does not contain the enzymes cinnamyl esterase (production of barnyard flavors) or anthocyanase which is known to produce oxidized color hues in wine.
Use:
Dilute 0.04 to 0.15 g per gal (0.01 to 0.04 g per liter) into water and add directly into the crushed grapes or must. Perform bench trials to determine optimal usage or start with a dosage of 0.1 g per gal (0.025 g per liter) and adjust as desired on future batches.
