An extremely malty, copper colored beer. A lager requiring cold fermentation in the 48 to 58 degree range. The hop flavor is subdued in favor of the rich maltiness. Let it age for about six months at lagering temperatures, but it will be ready to drink after only one month. Higher in alcohol. The malt extract for this kit is made entirely from German Pilsner Malt, giving it that classic European flavor.

John C. Maier of Rogue Brewing Company, Newport Oregon has been an avid homebrewer since 1982. In the Fall of 1986, he decided to turn his passion into a job and attended the Siebel Institute of Technology, graduating from their 50th course in Brewing Technology. The Alaskan Brewery in Juneau hired John as Assistant BrewMaster in March of 1987. In 1988 he won the prestigious American Homebrewer's Association Homebrewer of the Year award. In May 1989 he left Alaska Brewery, and that same month walked in on the very first brew at Rogue Ales Brewery in Newport, Oregon. He has brewed over thirty million pints of beer for Rogue since.
Rogue beers have won too many awards to list, and the brewery consistently receive the highest level of critical acclaim. In our opinion, Rogue makes some of the most original and best beers anywhere because John continuously experiments to expand and refine his brewing creativity. Imperial India Pale Ale ("I2PA") Recipe We were ecstatic when John offered us his famous Imperial India Pale Ale recipe as an ingredient kit. I2PA is a malty beer that is radically hopped with an intense aroma and hop bitterness. You can think of I2PA as an IPA on steroids. Cryo Hops® provide brewers with the ability to get gigantic hop character while reducing astringent and unpleasant vegetal flavors. With a substantially higher oil and resin content, LupuLN2 powder offers up all the flavor and aroma of a heavily hopped beer, but with a significanly reduced grassy character. Additionally, the lower dosage rate of the concentrated powder reduces the volume of trub and therefore, kettle loss. Using Cryo Hops® you will net more beer that is clearer!
Typical usage of Cryo Hops® would be roughly 50% of pellets. LupuLN2 powder can be used in any application where traditional hop products are utilized, including: Bittering, Kettle, Whirlpool and even direct to the fermentor. It is suggested that you use Cryo Hops® as late additions, in the whirlpool or dry hop, as the volatile aromatic compounds will be driven off if added early in the boil.

We would not have put 3 lbs of honey with 4.5 lbs of malt extract in a pale ale, but Jim had no fear and did just that. The result - a really nice mix of malt and honey flavors. There is enough honey to make it through into the flavor. Just a little Cascade hops in the beginning and finish keep the flavor emphasis on the honey. He suggests WLP002 because it is less attenuative and leaves more malt behind.

2.7 L - Chevallier was the first ever selected landrace for malting and it’s what Crips's founders Fred and George Smith would have malted back in 1870. Chevallier reigned supreme for over 100 years as the dominant barley variety in England from the 1820’s to 1920’s. It was propagated all over the world and was being grown in Australia commercially as recently as 1960. It formed the backbone of many Victorian ales and in its revived form, it's won awards for its depth of flavor.
Crisp Chevallier is characterized by warm, cracker and biscuit aroma with a full flavor. Compared to many other modern barleys its aroma and flavor are quite pronounced. Suitable for any malt-forward ale, or where increased malt character is needed to balance a high hop load.

Ale Industries was the second brewery to open in Concord, and just happened to be right next door to us (man, we were lucky)! Morgan and Steve, the brewers and co-owners, opened Ale Industries with one thing in mind - to not brew the same beers that everyone else is brewing. Their first beer, a hybrid Witbier called "Orange Kush" (now called Golden State of Mind), is more malty and aromatic than most commercial wits are. Nose Goblin from Ghost Town Brewing in Oakland, CA is their infamous West Coast-style Imperial IPA with big honking notes of white grapes, melons, berries, and uncouth levels of dankness. This dangerously smooth double IPA is all about the hops with very little malt character. Almost exclusively comprised of Pilsner with just a dash if acidulated malt, Nose Goblin is a beautiful clear straw color in the glass. Amarone style red wine hails from Valpolicella in the Veneto region of north-eastern Italy. Traditionally, Amarone is made from only three approved grape varieties—Corvina, Corvinone, and Rondinella. To prepare the grapes, winemakers use a process known as ‘apassimento’, an Italian term for drying the harvested grapes for up to several months to concentrate the sugars and flavor. Amarone is known for its full-body, strong flavor, and high alcohol percentage. Some speculate Amarone’s creation to date back to Ancient Rome, as this powerful red would have slaked the Roman’s thirst for highly alcoholic wine.
Our Italian Amarone Style has a deep red fruit quality with notes of tart cherry and raspberry, a hint of chocolate and spice, with a moderate oak character. Standing tall at 14% alcohol by volume, this full-bodied wine is quite dry with a long lingering finish.

High quality French oak cubes are used in the making of the Amarone Style kit. One of the reasons oak has always been used to age wine is the slow release of delicious, complex compounds that complement the wines flavor. John C. Maier of Rogue Brewing Company, Newport Oregon has been an avid homebrewer since 1982. Imperial India Pale Ale ("I2PA") Recipe We were ecstatic when John offered us his famous Imperial India Pale Ale recipe as an ingredient kit. I2PA is a malty beer that is radically hopped with an intense aroma and hop bitterness. You can think of I2PA as an IPA on steroids. Beside the extract, the only other ingredient is a copious amounts of hops. No steeping grains! We suggest you buy a bottle of Rogue I 2 PA and see how your version matches up against the original. John recommends using White Labs California Yeast, WLP001.

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. "Ever since the first alt bier hit my lips I've been hooked on this style! Germany has alot more to offer than just their lagers and this is a great example!" Ryan recommends a step mash. He likes to dough-in at 130F for a 15 minute Protein Rest, and then raise to sacharification rest of 154F for 60 minutes before mashing out at 168F. He likes a 45-60 minute sparge with 170F liquor. Ryan also recommends a 90 minute boil for this style, so hold off on those hops until you are 30 minutes into boil. You may need to collect more wort than you normally would to compensate for the additional boil-off. Ferment at 62-64 for 2 weeks in primary, and lager or 4-8 weeks at 40F if you can keep your hands off it for that long. Prost!

Dosage
Dosing rate greatly depends on your recipe and desired flavor intensity. We recommend starting with 2.5 mL for a 5-gallon batch and increasing to 5-15 mL for high-intensity flavor impact. Add after fermentation is complete, ideally at the coldest and latest point in your process, in your fermenter, keg, or bottling bucket.
