Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.
One the most popular hops in craft brewing today, Galaxy hops are adored for their huge oil content and pungent citrus and passionfruit flavors. This single hop variety accounts for the majority of hop yield coming from Australia, and is still one of the more difficult hops to get your hands on. It's so popular that we have to contract for it years in advance, so be sure to shore up your supply when it's in stock! This tantalizing dual purpose hop can be used up and down the hopping schedule and is an absolute stunner when used late in the boil, whirlpool, or dry hopping. Expect big aromas of peach with hints of pineapple and tropical fruit. Use liberally in all hop-forward styles, including IPAs, Pale Ales, Hazys, hoppy lagers, or any beer where you want to add a little tropical twist.

Galena is a classic American hop that was been used in many quintessential craft beers. Galena features great bittering with neutral character. Medium, pleasant hoppiness. Strong, somewhat floral, pleasant aroma. We use this hop quite a bit in an assortment of styles.

Galena was the original bittering hop we used in most of our kits thought the 90's. We later switched to using Magnum but many of our original customers still really like this hop. Regan Dillon, MoreBeer!'s second customer and later partner, was a big champion of this variety through the 1980's and 1990's. Regan still loves this hop so if you happen to run into Regan at our Concord store or at a festival you can become instant friends by saying "Man, I don't know why Galena isn't used more!"

Manifolds are a great way to have one CO2 tank supply multiple kegs. This manifold is made from aluminum, brass, and stainless. It also works up to 100 psi and includes 1/4 in ball valves with built in check valves. Another ball valve can be added to the end of the manifold for an additional gas line. CO2 and Nitrogen tanks, especially the 5lb size most brewers use, are notoriously wobbly and easy to knock over once the regulator is mounted on them. This handy Gauge Cage helps protect the gauges themselves, as well as the fragile points where they thread into the regulator body, from damage in case of a fall.
Specifically sized to fit our D1060 and D1070 Taprite brand ragulators, these cages may not fit some budget regulators manufactured overseas.
A heat soluble, commercial quallity extra no. 1 grade, powered Gelaitin. This is much higher quality Gelatin than you will find in most beer/winemaking shops. It is composed of high molecular weight mass proteins that carry a big positive charge. Prepare by mixing in warm water and then adding during a transfer or pump-over. The solution must be maintained at 95-104F (35-40C) when used. See below for different dosage rates for beer and wine.
For Beer
Use 1/2 tsp for five gallons of beer. Dissolve gelatin into 1/4-1/2 cup of hot water to dissolve and add to beer. Wait a few days and rack off.
A rough approximate of weight is 1 tsp = 1.2 grams. We highly recommend using a scale to weigh the product for an accurate dose. We do not recommend relying on these rough conversions for accurate dosage rates.
Often used with isinglass, bentonite, gelatins, and other organically derived fining agents to help compact the lees, Gelocolle is a liquid solution of suspended silica that is used during fining to help improve settling. Gelocolle also helps to limit the risk of over-fining when used in conjuction with other fining agents. Gelocolle can also be used to remove excess protein in both red and white wine, thereby improving their filterability. Gelocolle is completely inert and will not add any flavor or aroma to the wine.
To Use
Add Gelocolle 1 hour after the fining agent. Mix well to ensure homogenization.
Recommended Dosage:
In general, use Gelocolle at a rate of 1 mL Gelocolle per 1 g of the fining agent you are aiding. For protein removal use 5 ml Gelocolle per gallon of wine.
Note: When using Gelocolle with a gelatin fining, use 1.0 mL of Gelocolle to 1.0 mL of gelatin.
Once opened use immediately.
Best stored at 50-68 F (10-20 C). Gelocolle solidifies irreversibly when frozen.
