This Scotch Ale recipe is a huge, malty beer with a deep rich copper color. Scotch Ales have a flavor a little reminiscent of single malt Scotch with smoky overtones and roasted flavors. With a 1.075 to 1.080 starting gravity and 24 IBU of bitterness, it is distinctly malty, but not cloying like some Scotch Ale recipes. Scotch Ale strains typically ferment well down to 60 degrees and leave behind very few esters or fruity flavors, emphasizing the malt.

Comparison to Scottzyme PEC5L:
Scottzyme PEC5L is a fast-acting general-purpose pectinase for typical clarification tasks, such as settling and flotation of white and rosé juices. It’s ideal for clean juice production from standard grapes and most fruit wines. In contrast, KS is the go-to choice when PEC5L isn’t enough—it’s stronger on stubborn, esterified pectins and delivers better results with problematic varieties or ferments that remain hazy even after PEC5L. While PEC5L is excellent for fast juice prep, KS excels in the most difficult cases, including post-fermentation haze and challenging press fractions.
Protocol
Dilute Scottzyme KS in 10 times its volume of chlorine-free water or juice. Add to must, juice, or wine and mix well. Suitable for use before or after fermentation. Do not add simultaneously with bentonite or high SO₂. Works effectively at 10–20°C.
Usage Rates
Recommended dosage: 1.5–4.0 mL per 1000 lb of fruit or 0.075–0.2 mL per gallon
= approximately 0.02–0.05 mL per liter

Protocol
Dilute Scottzyme PEC5L in 10 times its volume of chlorine-free water or juice. Add to must or juice immediately after crushing or during transfer to settling tank. Mix well to ensure even distribution. For flotation, add just before or during the flotation process. Avoid adding at the same time as SO₂ or bentonite.
Usage Rates

40cm x 40cm filter pads made for 40x40 plate filters. 9-10 micron pads are considered to be a "very rough" filtration and are typically used to prepare the wine to be filtered by finer pads, usually either 5-7 micron; or also to pre-filter white musts prior to fermentation. Please note that all pad filters are rated 'nominal', meaning that about 90-95% of all particulate matter at the micron rating will be filtered out. There will always be a little bit of smaller material that is also filtered out, as well as some larger material that will make it through.
The filters can be sterilized by in-line steam, auto-claving, dry heat, hot water or chemical methods. We choose to run Saniclean (CL27) solution through the pads followed by sterile water or a small amount of wine that is then discarded. After the solution is run through the pads, and the pads have softened, the filter will need to be re-tightened.
Each pad has an entry side and an exit side, distinguishable by their different textures. The entry side is a billowy type texture, frequently called the "rough" side; and the exit side has a crosshatch pattern and is commonly called the "smooth" side. The NukaTap FC is the world's only forward-sealing flow control tap that can use an auto close spring. By inserting the spring between the flow control device and NukaTap shuttle, the tap will automatically close when you let go of the handle. This is perfect for customers who may not be diligent enough to remember to completely turn off the tap after each pour. Or for those with little kids or pesky cats that knock everything around! This very inexpensive spring can save you from emptying an entire keg and then losing a whole bottle of gas.
Please note: this spring is not compatible with the standard non-flow control NukaTap faucet or the NukaTap Flow Control G2.

Transfer fermented, but uncarbonated, beer from carboy to carboy or from carboy to keg. For those brewers that perhaps cannot lift a carboy or have issues with siphoning this is a great solution. Self-priming (will push air) so that it can draw out of a carboy or tank. Gentle diaphragm action so as to not "beat up" the beer. Made of food-grade, NSF approved, materials polypropylene and santoprene, so no metallic interaction with the product. Pumps 3 gallons per minute.
Flow can be restricted with an inline valve positioned on the outflow side. Self-regulating motor is designed to temporarily shut down, and then turn back on, when restriction pressure exceeds pump capacity. Has a heat limitation of 125 degrees Fahrenheit so cannot be used in brewing applications.
Shurflo brand pump is equipped with 1/2" Male NPT posts on the inlet and outlet. Does not include the plastic barb fittings you will need to purchase separately. Please see the "You Might Also Need" section below for our recommendations regarding which fittings to attach to the pump.

Sensy™ yeast for whites and rosé was selected for its special ability to produce very low levels of SO2 and H2S while completing rapid alcoholic fermentation under white winemaking conditions. Low acetaldehyde production is a great asset in helping to stabilize wines with low to moderate SO2 levels. Recommended for white wines, even under low temperature and NTU conditions. Sensy™ has a short lag phase and low nutrient demand. Respectful of varietal aromas, with balanced mouthfeel and freshness. Malolactic bacteria friendly. Add servomyces to your beer to increase yeast health because healthy yeast make better tasting beer. Other benefits include a decrease in fermentation time and increased alcohol potential. Servomyces stimulates the uptake of maltose which results in drier beer with higher alcohol yields. It is made by saturating beer yeast with zinc and then drying it. Zinc is a missing nutrient in wort and is more readily absorbed from dead yeast cells than by adding it directly as a mineral. Originally available only to professional brewers, this wonderful yeast nutrient is now to the homebrewing community, thanks to White Labs and Lallemand. Since it's introduction, we have been after White Labs to make a smaller, more easy-to-use version of the product. It wasn't until our very own Shea Comfort came up with the capsule idea that they were able to move forward and deliver this "super food" to us! Olin Schultz of MoreBeer did an intial side-by-side trial batch using "Servo" and found the beer with servo started faster, fermented quicker, and finished 1 gravity point less than the control batch. While it is not a cure-all pill for your brew, it offers the serious home brewer an easy, effective way to help ensure yeast health. Servomyces was developed in Germany at the Weihenstephan brewing school and the Munich University, so of course it conforms to the German Purity Law! Contains 6 capsules good for 5 gallons of wort each. Add Servo in the last 10 minutes of the boil. If your ferment does not require a boil ( as in a mead), open the capsule and add the Servomyces directly.

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.
