It is considered Heirloom because it is an old variety with a very low yield of 1.5-2 tons per acre. Modern varietals now produce up to 4 tons per acre. Why do farmers grow Maris Otter when new high-yield, disease resistant varietals are available? The name arrives from the fact that it gives beer a wonderful golden hue when used 50/50 in conjunction with pils or pale base malt. This malt is highly modified making it very easy to convert. Viking has done research that when Golden Ale malt is combined 50/50 with Viking Pils the resulting flavor graph is nearly identical to Maris Otter malt. A twist on our standard English Pale Ale, this recipe calls for Munich and Carapils malts for added roundness and body Includes Magnum and Northern Brewer hops Estimated ABV: 5.1% Estimated IBUs: 55-59 Makes 5 gallons of finished beer A very well balanced Pale Ale. You can taste the malt and the hops without being overpowered by the bitterness. We use Crisp Maris Otter malt for a drier finishing Pale Ale. We differ from the standard British Pale Ale recipes by throwing in a 1/2 of Munich for a little roundness of flavor and 1/2 pound of Carapils for added body. The crystal malt used is British Carastan. Northern Brewer hops are really mellow and not at the front of the flavor profile. Suitable for both hops and steeping grains. We highly recommend using a steeping bag for hops to keep vegetal matter contained in the boil kettle and out of your fermenter. If you use a counterflow chiller or plate chiller for cooling, filtering hops is even more important as these devices can clog if too much hop matter passes through them. 3.5° L - Briess Malting - Goldpils® Vienna Malt is a superb example of a classic malt. Less sweet than Pale Ale Malt, it is a rich malty 2-Row base malt that offers complexity and depth with a toasted note at the finish for your classic Vienna, Oktoberfest and Marzen beers. Goldpils® Vienna Malt is less modified than Pale Ale Malt and less intensely kilned than Munich Malts. As a result it delivers malty flavor with less sweetness than Pale Ale Malt and less color than Munich Malts. You can use this malt at up to 100% for tradtional Geramn Lagers and rich, full flavored dark beers. It can also be used to provide a delicious maltiness to IPA's, where we suggesting using GoldPils as 10% of your overall grain bill.
