Typical usage of Cryo Hops® would be roughly 50% of pellets. Brewed for the first time in 2010 in our parking lot at the annual July 15th Showroom Sale, we decided to experiment with another sour. This Belgian Style Blonde, destined for a Brettanomyces fermentation was born! On a whim, the boys decided to have fun with it and add 1lb of California Golden Raisins per 5 gallons with the second dose of Brettanomyces. The sugars in the raisins ferment out completely and seem to be an excellent source of food for our ‘lil wild buddy's. The end result: A classic lambic that is as mild or as wild as you make it!
This is a great base recipe for a Belgian Style Blonde Ale. Great body and mouthfeel balanced with a funky delicious sour edge. So have fun with this Lambic Recipe and make it your own!
Tip: Patience, patience, patience. If brewing All-Grain, try mashing higher for some added body. (We recommend 156F.) Brettanomyces loves oxygen just as much, or maybe more than Saccharomyces spread the love! Use restraint with these critters, don’t add the whole kitchen sink. Experiment with one to two cultures per batch, at intervals, and preferably with a small amount of a new food source. Patience. CA Golden Raisins are an excellent food source! (ahem, hint hint!) Don’t disturb the fermentation vessel while the pellicle is formed. The pellicle provides protection from excessive oxidation over the long aging time. Patience. Use excellent sanitary methods when working with our wild lil buddy’s to ensure a clean brewhouse. Try adding any local fruit as a food source for the bugs and wild yeasts. They love it! Patience!

We recently changed this recipe slightly, making all finishing hops Centennial (rather than a blend between Centennial and HBC-342). We made sure to keep the Simcoe® dry hop though, as we felt this really brought a "pop" to the aroma!

If you prefer a hoppy beer, you’re likely concerned with keeping the hops in your boil kettle and out of your fermenter during your home brewing. The Blichmann Hop Blocker is a handy brewing accessory that promises to keep those hops out of the fermenter and securely in the boil kettle, all without disrupting the rest of the brewing process.
Through rigorous and repetitive testing, Blichmann Engineering has determined that the 90 percent to 95 percent of the hop material is left behind when using the Blichmann Hop Blocker to transfer your brew to the fermenter. While many traditional screen filters draw from the bottom of the kettle and often plug the screen, the Hop Blocker drains the majority of the wort from the top down, enabling the hops and trub to settle undisturbed at the bottom of the kettle. The filter works on just a small portion of the wort instead of the entire thing, making it much less disruptive.

While IPAs are typically fermented with ale yeasts, cold IPAs like Hopnosis are fermented with lager yeasts. Remember that IPA stands for India Pale Ale, so fermenting an IPA with lager yeasts signifies a break with tradition.
“When you use a lager yeast to ferment an IPA, you get a cleaner and less ester-driven aroma profile,” said Brewmaster Matt Brynildson. “The colder fermentation also creates a lighter backbone that helps accentuate the bright, tropical hops we’re using. So while Hopnosis offers a lot of things you love in a straight-ahead West Coast IPA, the lager yeast is what pushes it toward the Cold IPA style.”

Inspired by Bell's Brewery Hopslam® Ale, this burly IPA calls for a royal rumble of 6 different hop varietals, including kettle additions of Crystal, Mosaic®, US Fuggles, Centennial, and Amarillo®, and following up with a massive power bomb of Simcoe® dry hops. This cadre of Pacific Northwest hops give the beer a resounding citrus character backstopped by tropical, grapefruit and floral notes. With a giant helping of liquid and dry malt extract, boosted by 12 oz of honey, this beer is strong enough to challenge Andre himself!

Phantasm Powder has been causing quite a stir on the craft beer scene, and the buzz is well deserved. Adding this powder to your wort and fermenting it with a thiolized yeast strain is one of the easiest ways to boost tropical flavor and aroma in your finished beer. Derived from Marlborough Sauvignon Blanc Grapes, this powder will add a concentrated dose of thiol precursors. During fermentation, yeast will go to work on these aroma compounds and "free the thiol", boosting the tropical bouquet of your beer to supernatural levels. We're stoked to get this cutting-edge ingredient into the hands of homebrewers so we designed a series of Phantasm recipe kits that will set you up to take full advantage of brewing with Phantasm Powder.
Our Phantasm Hazy IPA packs a 10-ounce wallop of New Zealand and Pacific Northwest aroma hop additions. We selected some of our favorite varietals that will provide a juicy, citrusy, tropical punch blast—harmonizing perfectly with Phantasm Powder. Since this kit series is all about the thiols, we start with whole cone Cascade in the mash to further increase the thiol precursors. Add the Phantasm Powder at flameout along with your whirlpool / hop stand additions. For maximum effect, we highly recommend choosing a thiolized yeast strain for fermentation which are specifically designed to boost thiol biotransformation.

Terpene Dream will take you Offworld and back to experience flavors that some people wouldn't believe. Our take on the subgenre of India Pale Ale referred to as Dank IPA, this beer emphasizes the close genetic relation that hops and cannabis share. The hops selected for this beer contribute to an overall "dank" character that is full of pine, earthy, and resinous notes. A delicious bitterness, high alcohol content, and sturdy malt backbone all perfectly balance the assertive hop flavor. Time to brew.
