40cm x 40cm filter pads made for 40x40 plate filters. 9-10 micron pads are considered to be a "very rough" filtration and are typically used to prepare the wine to be filtered by finer pads, usually either 5-7 micron; or also to pre-filter white musts prior to fermentation. Please note that all pad filters are rated 'nominal', meaning that about 90-95% of all particulate matter at the micron rating will be filtered out. There will always be a little bit of smaller material that is also filtered out, as well as some larger material that will make it through.
The filters can be sterilized by in-line steam, auto-claving, dry heat, hot water or chemical methods. We choose to run Saniclean (CL27) solution through the pads followed by sterile water or a small amount of wine that is then discarded. After the solution is run through the pads, and the pads have softened, the filter will need to be re-tightened.
Each pad has an entry side and an exit side, distinguishable by their different textures. The entry side is a billowy type texture, frequently called the "rough" side; and the exit side has a crosshatch pattern and is commonly called the "smooth" side. How do one keg of beer, one keg of sparkling wine, and one keg of root beer, sound for your next party? Awesome? Yeah, we think so too. But, each of these different beverages requires a different serving pressure, and nobody wants to go buy an extra CO2 tank and regulator for each different beverage. Enter the Secondary Regulator!
Standard multi-body CO2 regulators are heavy and can make a CO2 tank prone to tipping over, especially as it gets empty. Combine that with the fact that there aren’t Gauge Cages for multi-body regulators and you’ve got a recipe for disaster.
Secondary regulators do not attach directly to CO2 tanks, instead mounting to the side or wall of a fridge, kegerator or jockey box. They allow you run multiple keg pressures from one tank of gas. The KOMOS DraftMaster is a perfect solution for small beer-serving establishments. This is very unique, dual purpose glycol beer chiller, with the ability to chill a trunk line while also being able to cool 4 additional unfrigerated beers inline. It features 4 built-in stainless steel draft coils that remain submersed in a glycol solution reservoir, as well as a dedicated submersible draft line pump that can be used to pump glycol solution through flooded draft towers or other draft line chilling apparatuses.
The draft coils are made from 8 mm OD stainless steel tubing. The inlets and outlets come ready for use with 8 mm Duotight fittings, or standard hose clamp / compression fittings if preferred. The temperature drop of the beverage after one pass through the coil will depend on several factors, such as the temp of the pre-chilled beer, reservoir solution, and ambient environment. Ideally, the DraftMaster should be used in ambient temperatures below 80°F with a 30% glycol solution. If operating the unit in hotter climates or with a non-glycol cooling solution, if you are using the inline chilling coils you may need to pass the beverage through two coils to lower it to serving temperature.
Although the DraftMaster is ideally used with propylene glycol to lower the cooling solution below 32°F, home users may find it works perfectly well with 100% distilled/RO water. We recommend leaving the reservoir temperature at or above 38°F when using water only, which will work well for cooling a single KOMOS Cobra tower or other glycol-ready draft tower.

That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: Ultralight malt extract, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. The malt in this recipe is basic and fairly neutral, the bittering clean and consistent, but the flavor and aroma from the late hop additions will vary; sometimes dramatically! The KegLand Aluminum Cast Cold Plate features an impressive thermal mass with excellent heat absorption characteristics. High conductivity aluminum alloy aids the heat transfer as your beverage travels through the internal stainless steel lines. Inlets and outlets come with standard 1/4" male flare thread so you can easily attach swivel nuts and barbs or Duotight adapters. If you're making a jockey box for backyard cookouts, tailgaters, or camping trips, we highly recommend cold plates over draft coils. Cooling plates are perfect in low volume applications where space is an issue, and the low-profile design leaves plenty of room to store other food or beverages. If you're looking to serve beer at a festival or wedding where the beer might be constantly flowing, we would recommend stainless coils like those featured in the KOMOS Draft Box. Performance Characteristics: With 68°F ambient beer temp, flow rate through the cold plate of 10oz/10 seconds, and 70% coverage of ice in contact with the cold plate, you will be able to reduce the temperature of the liquid as it exits the cold plate to below 39°F with a single pass. You can use pass through shanks for beer entry through the back side of a cooler. Drill a 1" hole through the cooler, insert the shank, and use the two attached nuts to tighten up on the cooler. You will need nuts and nipples of the size line you are working with as well as hose clamps. We do not use pass through shanks in our boxes because we drill a hole that is same size as the line so we can pull it back in when we are traveling. However there might be instances where they would be appropriate. Pass through shanks can also be used to put through the side of a refrigerator to pass a gas line through.
Installation Note: On a fridge there are generally no coolant lines running through the door but please check to see there are no lines connecting the door and the rest of the refrigerator. To test for coolant lines on a freezer start with a warm freezer then plug the unit in with the lid open. You should be able to see the lines form condensation on the inside of the freezer where there are lines running. Please still use caution when drilling.

About Perlick Forward Sealing Beer Faucets:
The #1 feature of the Perlick faucet is its forward sealing design. Why is that so important? An ordinary, rear-sealing faucet closes by pushing a shuttle against the faucet shank, at the rear of the faucet. So once the tap is closed the faucet is still full of beer that has to be drained out. There is actually a pin hole in the back of an ordinary faucet that allows beer to drain. Because of this design, leftover beer residue inside the faucet makes operation sticky and can harbor bacteria which harm your beer’s flavor as it flows through the faucet. In the Perlick faucet, with its Forward Sealing design, beer only has to drain from the short 1" nozzle section. This allows it to always operate smoothly (even when it was not cleaned between uses) and greatly reduces contamination!.
Please note: In order for the push-back creamer to function properly, you must avoid overtightening the tap ferrule. If you're unable to push-back on the faucet lever, check that there's enough room between the tap ferrule and the friction bonnet and back off the tap ferrule as needed.

Red Wonder was developed to add fruit and chocolate flavor to red wine. It brings the body and richness of sur lie aging with the amazing impact of ellagic finishing tannins. The ellagic tannins in this blend were selected for their ability to impart chocolate flavors into the wine.
Red Wonder is a blend of specially inactivated yeast (SIY), elected ellagic tannins, and a little bit of LiquiBody Gum Arabic. In addition to body and flavor this product helps reduce the need for SO2 and also helps to lock in color.
You certainly could select an SIY, like our CellarScience Easy Sur Lie and then trial them with different ellagic tannins along with LiquiBody. But we've worked in small wineries and we know you are busy, so we've done that trialing for you and selected the blend that most often turned out really exceptional red wines.
Directions:
Use at the rate of 0.4 to 1.5 g per gallon of wine. Rehydrate in warm water or wine for 30 minutes and then stir directly into the tank or barrel. Once fully mixed it doesn't need any further stirring. We recommend starting with dosage of 1 g per gal (0.25 g per liter) and adjusting on further batches as needed.

Of the six noble grapes, Riesling is the lone variety to be of German origin rather than French. Originally from the Rheingau region of Germany, where it is still the most widely cultivated grape today, Riesling is known for its outstanding aromatics and is commonly regarded by wine experts as the finest white grape variety in the world. Mercurial in nature, Riesling is highly “terroir-expressive” and begs to be planted in cooler climates; but even small climatic variances in a characteristically cool growing region can lead to markedly different results in the finished wine. Often noted for having a high acidity and palpable mineral character, Riesling is adored for its floral aroma and mouthwatering orchard flavors of apricot and peach, as well as many other ripe fruit notes that vary depending on the region.
To this day, Germany continues to boast the highest production of Riesling in the world, despite the fact that the vines have made their way to countries with far more tremendous growing capacity in terms of sheer acreage. By example, California’s vast collection of vineyards dedicate less than 4,000 acres to Riesling, with nearly half of the total being grown in Monterey. Californian Riesling tends to be softer, with less mineral quality and somewhat more subdued fruit flavors.
Our California Riesling sports a light-medium body and leaps out of the glass with notes of apricot and mango, followed by a delightful acidity. This dry white wine has no oak character and an easy-drinking alcohol level of 12.5%.
