Pumping off the mash tun is the easiest way to collapse the screens. It is recommended that you either put a tee and a vacuum breaker ahead of the pump or run the wort into a grant and pump off the grant. Controlling the pump with restriction, a VFD, or a dual level float switch is ideal.
This tall cylindrical grant has three 1.5" tri-clamp ports and a silicone tube for a sight glass. The narrow design helps to reduce surface area and hot side aeration. The inlet and outlet side ports are raised a few inches above the conical dish bottom dump, which helps to separate grain sediment from the wort.

Dry mead is similar to a dry white wine. This kit will make a delicious dry mead that you can age out for years to come. You can also choose to carbonate it and serve at a wedding for a sparkling mead toast! As a slight aside, the term Honeymoon is said to refer to drinking Mead for 1 month after the wedding to help ensure the birth of a boy.
While the kit is great still or carbonated, the adventurous home fermenter could use this kit as a base on which to experiment. Consider fermenting it out and then splitting it off into smaller 1 gallon containers where you can make a sweet mead by adding more honey to one, vanilla bean to another, fruit to another, etc.
When making a Dry Mead we recommend that you have a small amount of Tartaric Acid on hand at the end of fermentation. As with a wine, a final small bump in acidity can bring out the honey flavor and aroma and add a bit of refreshment. We suggest adding 1/4 tsp at a time to your taste.

Chill, then pitch a vial of Belgian ale yeast. The Maibock came out great, the Belgian strong even better. Of course, if you don't feel like attempting to cook yeast to make this beer, a nice big starter of Belgian ale yeast should do the trick." Sounds great to us!

These microagglomerated corks are a simple and high quality option for sealing your wine. Through a proprietary process there is a removal of all TCA, which is responsible for "cork taint". Agglomerated corks are made from small cork pieces held together with a food grade binder. These corks are recommended for wines aged up to 3 years. These microagglomerated corks are a simple and high quality option for sealing your wine. Through a proprietary process there is a removal of all TCA, which is responsible for "cork taint". 407 °L - Briess Malting - Briess Midnight Wheat Malt will contribute the same color characteristics as most other Black Malts but without the bitter, astringent, dry flavors or aftertaste. After many trials and test batches, he came up with this recipe that is very drinkable when it is fresh. It will get smoother with a couple months of aging and creaminess added by the lactose makes this a very good winter warming stout. Jim hopes you enjoy this beer as much as he has. Jim recommends WLP004 Irish ale yeast.

Maintenance
EC electrodes can develop nutrient build up over time. To minimize build up, always rinse the probe in fresh tap water after every use.
Converting EC to TDS
The Milwaukee PRO Conductivity Tester, like all conductivity meters, provides a measure of electrically charged ions in a solution and is an absolute measure of conductivity.
EC/TDS can converted. Different scales include the 500 scale, 650 scale and the 700 scale.
Your µS/cm reading can be approximately converted to other scales as shown in the examples below.
2.00 mS/cm = 2000 µS/cm = 1000 ppm on .50 factor scale
2.00 mS/cm = 2000 µS/cm = 1400 ppm on the 442 scale or .70 factor scale
