300-375 °L - Viking Malt - Viking Chocolate Malt is produced by roasting from pilsner malt. Final temperature and roasting time is somewhat lower compared to their Black Malt. The amylolytic activity of Chocolate Malt is zero. The amount of fermentable extract is rather low. Flavor of Chocolate Malt is burnt, bitter and smoky, but not as intense as Black Malt. Aromas and tastes of coffee and chocolate can be found and they are well balanced in the overall taste.
Chocolate Malt is mainly included in grists for Porters and Stouts, but it can also be used for any other dark colored beers like Dark Ales due to its strong coloring value. Chocolate Malt contributes roasted flavors and aromas with hints of dark chocolate and coffee in any beer. Already with rather low dosage portions a remarkable increase in color can be found together with changes in flavor and aroma. Typical dosage rate of Chocolate Malt is normally under 10%.

How to Brew with DynaBoost?
DynaBoost serves as a versatile companion in the brewhouse, adding a rich and dynamic hop character to your beer. This exceptionally flowable oil extract delivers varietal hop characteristics to your brew through a high concentration of beer-soluble compounds. Thanks to its solubility, brewers may see an increase in wort yield due to a reduction in trub.
Kettle: DynaBoost carries variety-specific alpha acid content and can be used both as an early bittering addition, or a late aroma addition in the kettle.
Post-Boil / Whirlpool: DynaBoost was specifically designed to boost aromatics as a whirlpool addition. The wort soluble oil extract will deliver variety-specific aroma attributes and minimize trub, potentially increasing your whirlpool yield.
Fermentation: DynaBoost requires contact time with hot liquid to incorporate into wort or fermenting beer. For that reason, brewers who choose to use DynaBoost in the fermenter often use a "dip hop" method, where a small portion of the wort is transferred to the fermenter hot (170-200°F) along with DynaBoost. The hot wort and DynaBoost mixture is then allowed to stand for a short period before the main knockout at fermentation temperature, after which yeast can be pitched.

How to Brew with HyperBoost?
HyperBoost® is designed to easily pour in your fermenter as a dry hop addition, adding an intense saturation of hop flavor to your finished beer. Most brewers choose to use HyperBoost during active fermentation, but it can also be added to the whirlpool. Using HyperBoost in place of traditional pellets can increase finished beer yield.
Kettle: HyperBoost is not intended for kettle additions. For early kettle and bittering additions, we recommend pellets or CO2 extract. DynaBoost® carries variety-specific oil and alpha acid content to the kettle and can be used as a late kettle addition.
Post-Boil / Whirlpool: For whirlpool use, brewers can replace up to 100% of pellets with HyperBoost. We suggest replacing T-90 pellet additions in the whirlpool at a rate of 50:1 by weight (20 g of HyperBoost to replace 1 kg T-90). Your brewery might choose to use more or less depending on beer style or overall goal.
Fermentation: HyperBoost can be used as an active or post-fermentation hop addition. Incorporate HyperBoost anywhere in the process you would typically use pellets.
Dry Hopping: For dry hop additions, YCH recommends using HyperBoost for 25-50% of the addition and adding T-90 or Cryo® pellets for the remainder of the hop charge. As a dry hop, we suggest starting with a replacement rate of 100:1 HyperBoost to T-90 pellets by weight (10 g HyperBoost in place of 1 kg T-90) to 125:1 (8 g HyperBoost in place of 1 kg T-90).

Cryo Hops® provide brewers with the ability to get gigantic hop character while reducing astringent and unpleasant vegetal flavors. With a substantially higher oil and resin content, LupuLN2 powder offers up all the flavor and aroma of a heavily hopped beer, but with a significanly reduced grassy character. Additionally, the lower dosage rate of the concentrated powder reduces the volume of trub and therefore, kettle loss. Using Cryo Hops® you will net more beer that is clearer!
Typical usage of Cryo Hops® would be roughly 50% of pellets. LupuLN2 powder can be used in any application where traditional hop products are utilized, including: Bittering, Kettle, Whirlpool and even direct to the fermentor. It is suggested that you use Cryo Hops® as late additions, in the whirlpool or dry hop, as the volatile aromatic compounds will be driven off if added early in the boil.
Cryo Hops® are an innovative hop product that is made by separating the lupulin from the hop flower using cryogenic processing. The result is a product with twice the potency of T90 pellets, with reduced astringency and vegetative material.
Note: These hops come pelletized. The powder is compressed into pellet form to make handling easier.

Used primarily in sanitizing solutions to lower pH, therefore making the SO2 solution more effective. Use 1 tbsp per gallon along with 1 tbsp meta per gallon. Citric is not added directly to must prior to either primary or ml fermentation as its metabolism can lead to volatile acidity.
A rough approximate of weight is 1 tsp = 4 grams. We highly recommend using a scale to weigh the product for an accurate dose. We do not recommend relying on these rough conversions for accurate dosage rates.

PBW
PBW stands for Powder Brewery Wash, which is a non-hazardous buffered alkaline brewery cleaner. PBW is the cleaner of choice for many breweries, where it out performs more hazardous caustic chemicals without removing the flesh off your bones. PBW also will not corrode soft metals. Comes in a jar with screw top lid.
When mixing hot water and PBW in an air or water tight space, it will create pressure. Please use caution when using PBW in enclosed equipment.
Star San
Star San is an acid based sanitizer that is quick, odorless, tasteless and safe for most materials except softer metals. Use of 1 oz of Star San per 5 gallons of water and a contact time of 1 minute makes Star San very economical and convenient.
As a high foamer, Star San's foaming action insures coverage and contact time in larger vessels and better penetration into nooks and crannys. Any foam that is left over in your carboy or keg from the Star San solution will not harm your beer or you, and is perfectly safe and non-toxic, nor will it impart any flavors or odors. If you plan on making some up for spray application it is best to use distilled or RO water to maximize the life of the unused portion (minerals in tap water reduce the shelf life of Star San once in solution).

Craft Meister Alkaline Brewery Wash will not leave a white chalky film on your equipment like most oxygen based cleaners and rinses away with ease. Spray Bottle A bucket full of sanitizer is great for soaking equipment, but not every job requires that much solution. This 8 oz Sanitizing Spray Bottle is the answer! Great for a quick spray on hands, fermenter valves, sample takers, etc. either before or immediately after use. Add 1/2 tsp (2 ml) of Star San with the plastic syringe and fill with water. Sanitizer will last up to 1 week before it is ineffective. Plastic Syringe The syringe is used to easily measure out 2 ml of Star San for the spray bottle. Used to clean the inside of tubing using a pump. Place in the line, hook up to the outlet of the pump and push through the line. Be careful not to suck into the pump head! Available in sizes for 1/2", 1", 1.5" and 2.5" inner diameter tubing.
Clear glass marbles are a great choice for filling up volume in a small fermenter or oak barrel. Most of us have been in that situation where we have the ideal container we want to use to store our wine, but we just don't have quite enough wine. What are your choices? Either use several smaller containers, buy wine to top up, or try to purge the air space with inert gas. None of these are ideal solutions.
Clear glass marbles, free of ink or contamination, are an ideal solution. Use just as much as you need to top up the vessel. When you transfer the wine out, remove your marbles, wash and reuse with your next batch (just don't lose them...)

With hot climate/high Brix fruit, Clos is a great choice for its high alcohol tolerance (17%), low Nitrogen needs and short lag phase. Rhizomes should be planted immediately for best results. If your area is still experiencing frost then you can plant them in a planter indoors until it is safe to transplant outside. The first years crop will generally be smaller than subsequent years. Since these are live plants, we cannot guarantee they will grow, so we recommend buying two of each type to help ensure their success.

Sleep a little easier knowing this gas in ball lock with built-in check valve has your back. The internal check valve allows gas to flow out, but won't allow backflow of liquid into your gas system. Many manifolds and regulators already feature check valves, but this disconnect will keep liquid from ever entering your gas lines in the first place. Especially handy if you force carbonate your beer using the bev out dip tube!
Why we love it: Because we've had beer shoot back into our gas line and that sucks. At some point you will have a keg that is pressurized more than the pressure in your gas system. This could be caused by different carbonation levels, a keg sitting at room temperature, etc. So for example if the pressure in your keg is at 20 psi and your regulator is set at 12 psi, when you connect your gas in quick-disconnect liquid shoots from the keg into the gas line. Eliminate that possibility with this ingenious fitting.
