Aside from brewing many award-winning beers, Tasty helped grow homebrewing as a hobby, and as a community, here in the Bay Area and well beyond.
Mike's American Amber Ale earned him multiple 1st- and 2nd-place ribbons, including a Gold Medal at the National Homebrew Competition. We were after him for awhile for this recipe and he finally gave his consent, allowing this to be the 11th entry into MoreBeer!'s lineup of Signature Series kits. With over 12 lbs of malt and 4 rounds of hop additions, this is a full-bodied, hop-forward beer. When it comes time to drink this beer, raise one for Tasty!

A very well balanced Pale Ale. You can taste the malt and the hops without being overpowered by the bitterness. We use Crisp Maris Otter malt for a drier finishing Pale Ale. We differ from the standard British Pale Ale recipes by throwing in a 1/2 of Munich for a little roundness of flavor and 1/2 pound of Carapils for added body. The crystal malt used is British Carastan. Northern Brewer hops are really mellow and not at the front of the flavor profile.

We took our American Pale recipe and upped the malt, threw a ton of hops in the finish for flavor, but kept the bitterness the same. We think toning down the perceived bitterness is one reason we consistently get great reviews from brewers sharing this with friends.
Keeping it real: Part of the success of this kit is blending a lot of Willamette and Cascade hops in the finish. This isn't a wild, new or crazy idea... this is old school. Cascade and Willamette were the hops that helped put craft brewing on the map in the 1980's. The reason they are still so popular... they make a damn good beer. We like damn good beer. And yes we like to wear our Sperry Topsiders and listen to Van Halen when we drink this (note if you were born in the 80's ignore this comment).

Matt Brynildson of Firestone Walker Brewing Co., Paso Robles, California. It seems to some that Matt has almost been bred to brew beer. After getting a degree in chemistry in 1993, Matt went to work in Michigan doing research and development on hops for the brewing industry. In 1995, Matt went to the famous Seibel Institute of Brewing Technology to further his education. After brewing for Goose Island in Chicago and then moving to California to work for SLO Brewing, Matt was appointed Small Brewmaster of the Year in 2001. Later that year, he was asked to join the crew at Firestone Walker. Two years later Matt was dubbed Mid-Sized Brewer of the Year at the Great American Beer Fest AND at the World Cup of Beer, for a total of 12 medals in just three years! As the name implies, this recipe is crafted around the specialty ingredient of White Koji. Koji is a staple ingredient in the fermentation processes for sake, soy sauce, miso, and more. But White Koji, in particular, is gaining ground as a new brewing ingredient which can impart a beautiful citric acidity in the final beer.

"Ever since the first alt bier hit my lips I've been hooked on this style! Germany has alot more to offer than just their lagers and this is a great example!" Ryan recommends a step mash. He likes to dough-in at 130F for a 15 minute Protein Rest, and then raise to sacharification rest of 154F for 60 minutes before mashing out at 168F. He likes a 45-60 minute sparge with 170F liquor. Ryan also recommends a 90 minute boil for this style, so hold off on those hops until you are 30 minutes into boil. You may need to collect more wort than you normally would to compensate for the additional boil-off. Ferment at 62-64 for 2 weeks in primary, and lager or 4-8 weeks at 40F if you can keep your hands off it for that long. Prost!

Brewed for the first time in 2010 in our parking lot at the annual July 15th Showroom Sale, we decided to experiment with another sour. This Belgian Style Blonde, destined for a Brettanomyces fermentation was born! On a whim, the boys decided to have fun with it and add 1lb of California Golden Raisins per 5 gallons with the second dose of Brettanomyces. The sugars in the raisins ferment out completely and seem to be an excellent source of food for our ‘lil wild buddy's. The end result: A classic lambic that is as mild or as wild as you make it!
This is a great base recipe for a Belgian Style Blonde Ale. Great body and mouthfeel balanced with a funky delicious sour edge. So have fun with this Lambic Recipe and make it your own!
Tip: Patience, patience, patience. If brewing All-Grain, try mashing higher for some added body. (We recommend 156F.) Brettanomyces loves oxygen just as much, or maybe more than Saccharomyces spread the love! Use restraint with these critters, don’t add the whole kitchen sink. Experiment with one to two cultures per batch, at intervals, and preferably with a small amount of a new food source. Patience. CA Golden Raisins are an excellent food source! (ahem, hint hint!) Don’t disturb the fermentation vessel while the pellicle is formed. The pellicle provides protection from excessive oxidation over the long aging time. Patience. Use excellent sanitary methods when working with our wild lil buddy’s to ensure a clean brewhouse. Try adding any local fruit as a food source for the bugs and wild yeasts. They love it! Patience!

Pizza Port in Solana Beach was the first of three brewpubs to open under the Pizza Port name. Brandon Edwards, who used to be an employee of Morebeer, has been brewing in Solana Beach for a number of months, and with Pizza Port for a few years. Brandon made this recipe to celebrate the one year anniversary of the Toronado beer bar opening in San Diego.
