This German-style Wheat Beer has a lovely blond color and distinct hazy appearance in the glass. The flavor for German Hefeweizen is primarily based on the flavor of the very specialized Hefeweizen yeast, so be sure to select one of these strains for fermentation. Just be ready for a vigorous fermentation! This beer is known to pop off airlocks if there isn't enough room in the fermenter. This is a true German-style Hefeweizen recipe using 60% White Wheat malt and 40% 2-Row malt. A dash of Northern Brewer hops provides just enough bitterness to balance the malt and yeast character. Dark Hill Porter is a tribute to one of our favorite west coast porters. This Black Butte Porter clone, commercially brewed by Deschutes Brewery in Oregon, is one of the most well-rounded porters out there. Being bittered with Bravo hops helps to initially balance the malty backbone, but that bitterness fades quickly, providing a smooth transition into the complex flavors of four different character malts. This combination of Wheat, Carapils, Crystal 120L, and Chocolate malts create a rounded mouthfeel and chocolate flavor.

The original Double IPA! Vinnie Cilurzo began homebrewing in 1989 while in college. In 1994 Vinnie started the Blind Pig Brewing Company in Temecula, CA, a small, low-budget micro-brewery known for their extremely hoppy IPA—an IPA which won silver medals at both the Great American Beer Festival and the World Beer Cup. Vinnie sold his share in Blind Pig and was hired to manage and brew at the Russian River Brewing Company, a start-up brewery by Korbel Champagne in Guerneville, CA. In late 2002 Korbel decided to get out of the beer business and sold the Russian River name and brand to Vinnie who moved the brewery to Santa Rosa, CA, 90 miles North of San Francisco, where he and his wife Natalie opened a brew-pub which serves delicious bites and, of course, all of the Russian River Ales. Vinnie has won 10 awards at the Great American Beer Festival in just six years and was named Small Brewing Company Brewmaster of the Year in 1999. Russian River's smashing success continues to this day, expanding and opening a second brewery in Windsor, CA. Almost every beer that Vinnie makes commercially started out as a homebrew recipe at one point or another. Even as a professional brewer, Vinnie still homebrews at least 5 or 6 times a year.
This is the original homebrew recipe that was the basis for Blind Pig IPA which won Silver Medals at the World Cup of Beer and the Great American Beer Festival in 1996, the last year Vinnie brewed it. Two dry hop additions along with 1 oz of American Oak are added directly to the fermenter after the first week of fermentation. To say it is a very unique, extremely flavorful IPA is an understatement. Vinnie recommends using White Labs California yeast, WLP001.

We took our American Pale recipe and upped the malt, threw a ton of hops in the finish for flavor, but kept the bitterness the same. We think toning down the perceived bitterness is one reason we consistently get great reviews from brewers sharing this with friends.
Keeping it real: Part of the success of this kit is blending a lot of Willamette and Cascade hops in the finish. This isn't a wild, new or crazy idea... this is old school. Cascade and Willamette were the hops that helped put craft brewing on the map in the 1980's. The reason they are still so popular... they make a damn good beer. We like damn good beer. And yes we like to wear our Sperry Topsiders and listen to Van Halen when we drink this (note if you were born in the 80's ignore this comment).

This Scotch Ale recipe is a huge, malty beer with a deep rich copper color. Scotch Ales have a flavor a little reminiscent of single malt Scotch with smoky overtones and roasted flavors. With a 1.075 to 1.080 starting gravity and 24 IBU of bitterness, it is distinctly malty, but not cloying like some Scotch Ale recipes. Scotch Ale strains typically ferment well down to 60 degrees and leave behind very few esters or fruity flavors, emphasizing the malt.

Jim was looking for a dark, smooth, creamy mouth feel stout just like an Australian stout he had tasted years ago. Over the years, Jim found a clone that was close but needed some small changes. After many trials and test batches, he came up with this recipe that is very drinkable when it is fresh. It will get smoother with a couple months of aging and creaminess added by the lactose makes this a very good winter warming stout. Jim hopes you enjoy this beer as much as he has. We have been a fan of John Palmer ever since his book, "How to Brew" hit our shelves way back when. After meeting him at a few gatherings here and there, and after recommending his book hands down over any other, we decided to try and add John to our Signature Series line-up. When he agreed, we knew we would get something special from him, and he did not disappoint. John describes his kit as: "a smooth, copper lager that strikes the perfect balance between a toasty sweet malt body and the noble overtures of the hops. This interpretation of the Vienna style has more hop flavor dancing around the edges than the current BJCP guidelines specify, but the hop profile really complements the rich malt palate for a lively complexity that you don't get from the hoppier Bohemian Pilsener or maltier Oktoberfest styles, and is richer and smoother than Dortmunder Export." A classic Porter recipe with a smooth, creamy body and delicious roasty flavor

Chocolate and Black Patent malts are the backbone of this style. Our all-grain version of Porter features munich malt for a little maltiness and carapils for better mouthfeel and head retention. The Northern Brewer hops impart a nice, but not overpowering bitterness. Good first dark beer. However, for many people, this is their favorite style. Just ask Regan who is a Porter nut. All of our Porter recipes are descendants of his designs which date back to the 1980s. You will not find any Roasted Barley in our Porter recipes as we believe this is the defining difference between Stout and Porter. If you would like to see the difference for yourself try making our B3 Stout (in extract) or our Silk Stout in all grain form and then one of our Porters. It is fun to have them on tap at the same time and show people the difference in dark beers.

This stout recipe is in between a sweet and dry Stout. Has the single dark grain dimension of authentic Irish Dry Stout with more of the maltiness of English Sweet Stout. Think of it as a maltier, creamier version of Guinness with slightly reduced bitterness.

This recipe comes from the late homebrewing legend—and our dear friend—Mike “Tasty” McDole. Mike is one of the best homebrewers we’ve ever known, and one of our original customers way back when the entire MoreBeer! operation fit inside a storage shed. Aside from brewing many award-winning beers, Tasty helped grow homebrewing as a hobby, and as a community, here in the Bay Area and well beyond.
Mike's American Amber Ale earned him multiple 1st- and 2nd-place ribbons, including a Gold Medal at the National Homebrew Competition. We were after him for awhile for this recipe and he finally gave his consent, allowing this to be the 11th entry into MoreBeer!'s lineup of Signature Series kits. With over 12 lbs of malt and 4 rounds of hop additions, this is a full-bodied, hop-forward beer. When it comes time to drink this beer, raise one for Tasty!
Tasty's All Grain Brewing Notes:
Mineral adjustments: Ca - 110 ppm; Mg - 21 ppm; Na - 21ppm; SO4 - 333 ppm; Cl - 45 ppm. Adjust Mash and Sparge water to a PH of 5.6. Recommended Sacchrification rest for 90 minutes at 152°F, followed by a 15-minute raise to 170°F, and a 15-minute Mash Out rest at 170°F.
