Liquid Malt Extract (LME) vs. Dried Malt Extract (DME) MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers. Cryo Hops® is a registered trademark owned by Yakima Chief Hops, LLC.

Pinnacle G Active Dry Distillers Yeast | Glucose | High Alcohol | 500 g
G is recommended for neutral alcohol applications Well-suited for use in simultaneous saccharification fermentations of starch substrates from grain Performs well when pitched directly in the fermenter Pinnacle Distillers Yeast (G) is an active dry yeast well-suited for use in simultaneous saccharification fermentations of starch substrates from grain. It has a high tolerance to liberated glucose. A relatively simple, straight-forward strain for neutral spirits. Commonly used for vodka or gin but could be used to bourbon as well. Has a high cell count (>20 x 10⁹ cells/g) Rehydrates well in direct pitch applications Has high ethanol and temperature tolerance Has organic acid tolerance Can be used in conjunction with glucoamylase and alpha amylase enzyme systems Application: This yeast product has optimal performance within a pH range of 4.0 to 5.0 but can ferment well in the range of 3.5 to 6.0. Optimal fermentation temperature is dependent on other stresses present (i.e. organic acid, ethanol and pH) but generally ferments well in the range of 92-98°F (33-37°C). Under various process conditions, this yeast can produce high ethanol up to and beyond 16% w/v. Directions for Use: Yeast can be added directly to a fermenter at a dose rate of between 1.67-4.17 lbs per 1,000 gallons of wort (0.2-0.5 kg per 1,000L of wort). Storage: Store in a cool, dry place. Product should be used within two years of its production date for best performance. Packages which have lost their vacuum seal should not be used. Opened packages can be stored cool and used within 3-4 days. Regulatory: All yeast conforms to current local regulations. Pinnacle Distillers Yeast began its life more than 30 years ago within the Scotch whisky sector. Over time, their yeast has become a well-established essential ingredient in the making of some of the finest award-winning malt and grain whiskies we are drinking today – not only in Scotland but around the world. In response to the growth of global spirits using many different substrates and a variety of multiple-sized, challenging processes, the family of Pinnacle Distillers Yeast has grown and is still increasing to meet future market demands.

Scottzyme Pec5L
Scottzyme PEC5L – Pectinase Enzyme for Enhanced Settling and Juice Yield Rapidly breaks down soluble pectins for faster settling and improved clarity Increases free-run and press yield by reducing viscosity and cell wall resistance Improves flotation efficiency and tightens lees compaction Effective across a wide pH range and performs well at low temperatures Ideal for white, rosé, and fruit wines requiring fast clarification and clean separation Scottzyme PEC5L is a highly active liquid pectinase enzyme formulated to reduce pectin-related haze and increase processing efficiency in juice production. By breaking down soluble pectins, PEC5L dramatically improves juice release during pressing, reduces must viscosity, and accelerates settling or flotation. The result is clearer juice, more compact lees, and higher overall yield. Its formulation is optimized for cool-temperature performance and a broad pH range, making it a versatile tool in grape and non-grape juice clarification. Unlike general pectinases, PEC5L is designed to act quickly and cleanly, without over-extraction of phenolics or bitterness. Protocol Dilute Scottzyme PEC5L in 10 times its volume of chlorine-free water or juice. Add to must or juice immediately after crushing or during transfer to settling tank. Mix well to ensure even distribution. For flotation, add just before or during the flotation process. Avoid adding at the same time as SO₂ or bentonite. Usage Rates Recommended dosage: 1.5–4.0 mL per 1000 lb of fruit or 0.075–0.2 mL per gallon of juice = approximately 0.02–0.05 mL per liter Use lower rates for clean, low-pectin fruit or warmer temperatures. Use higher rates for pectin-rich grapes, low temperatures, or difficult-to-settle musts. Allow contact time of 2 to 12 hours depending on conditions and desired level of clarification.

M-80 IPA by Carlos Musques | 5 Gallon Beer Recipe Kit | All-Grain
Our Signature Series kits offer a selection of crazy, unique beers developed by MoreBeer! customers, associates, and homebrewing legends! Packed with hops in the kettle and finished with fresh oranges in the fermenter, this IPA is primed to explode in your mouth Includes Columbus, Simcoe®, and Centennial hops Estimated ABV: 6.5% Estimated IBUs: 75-80 Makes 5 gallons of finished beer Remember your parents scaring you with "Be careful of firecrackers, they can explode in your hand!" Well let us warn you right now... our new, juicy M-80 IPA is going to explode in your mouth. It's going to be crazy. Flavors going everywhere. Maybe your parents would tell you to use caution and not to make this beer. But you're grown up now, making adult decisions (most of the time), and we think you've earned the right to buy a beer kit with a fuse and a lighter. With a slight smile and a wink of the eye, we say "go ahead... have some fun". Let us tell you about the inner workings of this bomb. Sure it has big IPA malt, but you want to know about the hops. It starts with an unreasonable amount of Simcoe®, Columbus, and Centennial hops. By themselves these are all explosive hops, but together they combine to bring true, huge IPA hop flavor. Because of the similarity of hops, one MoreBeer! staffer dubbed it a mini "Pliny The Elder... but with orange". High praise indeed. Did you just say Orange? Well done sir, good paying attention. What really sets this IPA apart from the masses is that the recipe calls for you to cut up and add three fresh oranges into the fermenter. Crazy? We thought so. But that is what we love about our Signature Series of Beer Kits, a selection of crazy, unique beers that really stand out. M-80 IPA was designed and created by your fellow homebrewer, Carlos Musquez. We do admit he went a little AWOL on this kit and into uncharted territory, but we love a rebel. You will need to supply the three fresh oranges... we'd ship them to you, but they would get a little squishy. Makes 5 gallons Estimated Original Gravity: 1.059-64 SRM (Color Range): 7 IBUs: 75-80 Estimated Alcohol Percentage: 6.5% Our recipe kits DO NOT include grain bags, yeast or priming sugar. To find our yeast recommendations, choose your preferred kit option above and then select the drop-down menu under “Yeast Options”. Left Coast Pale Ale by Phil Montalbano | 5 Gallon Beer Recipe Kit | Extract
Our Signature Series kits offer a selection of crazy, unique beers developed by MoreBeer! customers, associates, and homebrewing legends! Enjoy the citrus/orange hop character Amarillo® hops impart on to this thirst-quenching Pale Ale Includes 100% Amarillo® hops Estimated ABV: 5.3% Estimated IBUs: 50-55 Makes 5 gallons of finished beer Phil created this recipe in an effort to stop his long, slow spiral into fruity, phenolic, sour beers that began to populate his fermenters and kegs back in 1998. Honestly, Phil seriously contemplated throwing gummy bears into his brew and realized it was time to step back, look around, sober up, and grab a classic West Coast pale ale. This beer is dominated by the wonderful Amarillo® hop that is known for having a citrus/orange flavor. The Left Coast Pale has been brewed many times over as a house favorite during the Fermentation Frenzy shop era (Los Altos, CA circa 1997-2007). Try it, you'll like it. And, unfortunately, so will your friends. Phil recommends for an even more pronounced hop nose and flavor you add an additional 1oz of Amarillo® hops to the fermenter as a dry hop addition (not included with kit). Juicy Brut IPA | 5 Gallon Beer Recipe Kit | Extract
Pronounced dry character with tropical hop flavors of lemon, orange, grapefruit, passionfruit and mango Includes a Mosaic®, Amarillo®, and Citra® hops Estimated ABV: 6.8% Estimated IBUs: 37 Makes 5 gallons of finished beer Have you ever wished you could crush your enemies and consume their life force!? .... yeah *cough* nor have we. But the same can't be said for the Juicy Brut! This maniacal monarch didn’t gain support for his claim to the throne through strategic wedding arrangements, nor did he bring his challengers to heel through deftly negotiated treaties. Oh, no. He conquered the realm using his dry, brutish nature and sheer force of juiciness. When the Juicy Brut enters the fray wielding his pulp-stained battle axe, he yawps but one maxim -- no quarter! Juicy Brut IPA has a pronounced dry character with almost no malt sweetness, setting the stage for the Mosaic®, Amarillo® and Citra® hops to be on full display. Leaning heavily on whirlpool and post fermentation additions, the tropical flavor of these hops come bursting forth with aromas of lemon, orange, grapefruit, passionfruit and mango. We can offer only one piece of advice. Bend the knee and swear fealty to the Juicy Brut! This recipe was developed by our own award winning Brewmeister Vito Delucchi as he was researching and writing an Article on Brut IPAs for BYO (Brew Your Own Magazine). Curious about Brut IPAs? Vito also wrote an article for MoreBeer.com on the subject. You can check out that article here: There and Back Again, A Brut IPA Tale! Throw on your favorite traveling cloak and join Vito on his quest to unlock the mysteries of the amyloglucosidase enzyme and discover the best methods for brewing Brut IPAs. Makes 5 gallons Estimated Original Gravity: 1.053 SRM (Color Range): 4 IBUs: 37 Estimated Alcohol Percentage: 6.8% Ultra Ferm Included (AD364) Our recipe kits DO NOT include grain bags, yeast or priming sugar. To find our yeast recommendations, choose your preferred kit option above and then select the drop-down menu under “Yeast Options”. For more info, click on the recommended yeast(s) below in the “You Might Also Need” section below. All included steeping grains will come milled. Citra® and Mosaic® are registered trademarks owned by Yakima Chief Hops, LLC. Amarillo® is a trademark owned by Virgil Gamache Farms, Inc.

Left Coast Pale Ale by Phil Montalbano | 5 Gallon Beer Recipe Kit | All-Grain
Makes 5 gallons Estimated Original Gravity: 1.050-55 SRM (Color Range): 12 IBUs: 50-55 Estimated Alcohol Percentage: 5.0-5.5% Our recipe kits DO NOT include grain bags, yeast or priming sugar. To find our yeast recommendations, choose your preferred kit option above and then select the drop-down menu under “Yeast Options”. For more info, click on the recommended yeast(s) below in the “You Might Also Need” section below. All grains will come milled, unless you select unmilled base malts.
