Columbus is a high-alpha hop that provides a neutral bitterness and an excellent aroma. The flavor and aroma are very pungent, so it is often used for late-addition hopping or dry-hopping. Great in IPA's. Flavor is slightly floral with some citrus notes. Also goes by the names Tomahawk, Zeus, and CTZ.
Rhizomes should be planted immediately for best results. If your area is still experiencing frost then you can plant them in a planter indoors until it is safe to transplant outside. The first years crop will generally be smaller than subsequent years. Since these are live plants, we cannot guarantee they will grow, so we recommend buying two of each type to help ensure their success.

Jim Nielsen’s Hop Mothra IPA uses 10 lbs of Ultralight Malt Extract, 1 pound of Light DME, and a trio of crystal malts that give this beer a beautiful pale to medium amber color. Perle, Cascade, and Liberty hops lend a spicy aroma with flavors of grape fruit and citrus.
Jim began home brewing in 1994, but it wasn’t until the Great American Beer Festival of ‘98 that he came across a beer that would alter the course of his hobby. Grant’s Brewing Company made a batch of beer especially for the festival – Hopzilla! This beer made such an impression on Jim that he decided to take his passion for home brewing to the next level, and he began his search for a brew system that would allow him to do everything the pros can do. Altus is an exemplary dual-purpose hop with high alpha acids for bittering and wonderful aromatics thanks to its high oil content. Belgian ales are really about creating a simple yet elegant malt base upon which the unique Belgian yeast strains can create their wonderful, complex flavors. This Belgian Ale is their equivalent of our pale ale in alcoholic strength and body. The difference is that the hops are very subdued and only complimentary where as in many American beers hops can create a majority of the flavor profile. One is not better than the other just different, and we love diversity in beer.
Terms used to describe Belgian Ales include phenolic, fruity, with the occasional clove, plum, and banana flavors coming through. Sometimes you just have to try one to understand. In the Dubble and Triple you will have some higher alcohol flavors coming through. This version is less alcoholic and highly drinkable.

Colle Perle is a hydrolyzed gelatin solution. Primary uses are clarification and the removal of bitter tannins and phenolics. Colle Perle flocculates and settles well. Desirable aromas and flavors are retained while harsh characters are removed. It is particularly useful to optimize potential of hard pressed product. In white wines it can be used in conjunction with bentonite to compact lees.
Dosage - Applied at a rate of 4 ml / gal.
Usage:
Juice - Dilute Colle Perle 1:1 in water. Add at the beginning of cold settling and mix evenly and completely throughout the juice. When used in juice Colle Perle should be used in conjunction with bentonite or Gelocolle to improve settling. Racking should be done after 1 week.
Wine in Aging - Dilute Colle Perle 1:1 in water. Stir vigorously into the wine to ensure thorough distribution. Racking should be done after 1 week. Filtration is possible 48-72 hours after fining with Colle Perle.
A malty beer with a firm bitterness, this style can be easily enhanced by cold aging for a month or two

A few years ago we had a competition in our showrooms for the best Holiday Beer. The winner was an unknown brewer named Kyle Sommers. We actually hired Kyle following the competition to work in our customer service office(see where good homebrew will get you!) In 2010 Kyle graduated from the Siebel Institute to continue his dream of becoming a professional Brewmaster. He is now brewing at Lagunitas.
We loved the big body, rich malt, and the extremely complex spice blend. When we went to make the recipe for sale we thought twice because we had to buy out the spice section of our local grocer.
Based on a Northern English style Brown Ale, it has 6 different spices added at two different times in the brewing and fermentation process, resembling and inspired by a Belgian-style winter beer. This winter warmer will make your kitchen smell like Thanksgiving Day at Grandma's house. With some added Belgian brown sugar to counter-balance the spice and add some alcohol content, this is a great way to top off your Holiday adventures by the fireside. If you are a firm believer in the Reinheitsgebot (no spices, sugar, etc.), this is not the beer for you!

LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.
If you prefer a hoppy beer, you’re likely concerned with keeping the hops in your boil kettle and out of your fermenter during your home brewing. The Blichmann Hop Blocker is a handy brewing accessory that promises to keep those hops out of the fermenter and securely in the boil kettle, all without disrupting the rest of the brewing process.
Through rigorous and repetitive testing, Blichmann Engineering has determined that the 90 percent to 95 percent of the hop material is left behind when using the Blichmann Hop Blocker to transfer your brew to the fermenter. While many traditional screen filters draw from the bottom of the kettle and often plug the screen, the Hop Blocker drains the majority of the wort from the top down, enabling the hops and trub to settle undisturbed at the bottom of the kettle. The filter works on just a small portion of the wort instead of the entire thing, making it much less disruptive.
The Blichmann Hop Blocker is designed for use with pellet hops only, not with whole, loose hops, as those could clog the Hop Blocker.
