Push says: "My family has been supportive of all the brewing gadgets and scattered projects including my "dark-beer-phobic" father-in-law. This recipe is an Americanized pilsner that I have evolved for him over the years. Sweeter than a standard pilsner, but still crisp and refreshing, I can't keep this around long in the Summer months." Belgian Ale will give you a full roundup of phenolic, fruity, clove, plum, and banana flavors Includes Perle and Saaz hops Estimated ABV: 5% Estimated IBUs: 32 Makes 5 gallons of finished beer Belgian ales are really about creating a simple yet elegant malt base upon which the unique Belgian yeast strains can create their wonderful, complex flavors. This Belgian Ale is their equivalent of our pale ale in alcoholic strength and body. The difference is that the hops are very subdued and only complimentary where as in many American beers hops can create a majority of the flavor profile. One is not better than the other just different, and we love diversity in beer. Terms used to describe Belgian Ales include phenolic, fruity, with the occasional clove, plum, and banana flavors coming through. Sometimes you just have to try one to understand. In the Dubble and Triple you will have some higher alcohol flavors coming through. This version is less alcoholic and highly drinkable. Any of the four Belgian yeast strains that we carry from Whitelabs could be used in any of the Belgian recipes. They are all excellent in their own right. A malt-forward German ale with a sturdy bitterness Includes Magnum, Saaz, and Mt. Hood hops Estimated ABV: 5% Estimated IBUs: 34-38 Makes 5 gallons of finished beer "Ever since the first alt bier hit my lips I've been hooked on this style! Germany has alot more to offer than just their lagers and this is a great example!" Ryan recommends a step mash. He likes to dough-in at 130F for a 15 minute Protein Rest, and then raise to sacharification rest of 154F for 60 minutes before mashing out at 168F. He likes a 45-60 minute sparge with 170F liquor. Ryan also recommends a 90 minute boil for this style, so hold off on those hops until you are 30 minutes into boil. You may need to collect more wort than you normally would to compensate for the additional boil-off. Ferment at 62-64 for 2 weeks in primary, and lager or 4-8 weeks at 40F if you can keep your hands off it for that long. Prost! He's also into gardening (his Cascades finally produced a good crop this year!), home improvement projects, and building furniture. Gary lives in Longmont, Colorado with his wife Erin, who fully supports his brewing habits she bought him a conical fermenter and is encouraging him to install taps in their family room. Gary enlightens us on how to authentically brew his beer: "This recipe can be brewed as either a Maibock or a Belgian strong ale. The beer was originally brewed as a 10.5 gallon batch split into two carboys with yeast slurry from previously brewed pilsner. To accurately recreate the Belgian strong ale, one should accidentally pour hot wort (due to user error with a counter-flow chiller) onto lager yeast slurry, being sure to thoroughly cook the yeast. Chill, then pitch a vial of Belgian ale yeast. The Maibock came out great, the Belgian strong even better. Of course, if you don't feel like attempting to cook yeast to make this beer, a nice big starter of Belgian ale yeast should do the trick." Sounds great to us! Liquid Malt Extract (LME) vs. Dried Malt Extract (DME) MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.
