We took our American Pale Ale recipe and upped the malt, threw a ton of hops in the finish for flavor, but kept the bitterness the same. We think toning down the perceived bitterness is one reason we consistently get great reviews from brewers sharing this with friends.
Keeping it real: Part of the success of this kit is blending a lot of Willamette and Cascade hops in the finish. This isn't a wild, new or crazy idea... this is old school. Cascade and Willamette were the hops that helped put craft brewing on the map in the 1980's. The reason they are still so popular... they make a damn good beer.

Keeping it real: Part of the success of this kit is blending a lot of Willamette and Cascade hops in the finish. This isn't a wild, new or crazy idea... this is old school. Cascade and Willamette were the hops that helped put craft brewing on the map in the 1980's. The reason they are still so popular... they make a damn good beer. We like damn good beer. Electric Brewing
Typical home brewing starter kits set you up to brew your first batch of beer on the kitchen stove. This may lower the price tag but brewers will naturally progress beyond the kitchen to an outdoor gas burner or electric brewing system. Electric brewing systems have several advantages, firstly being that they do not require propane so there is no chance of running out of gas mid-brew. Secondly, electric kettles use a built-in temperature probe and digital controller to automatically maintain temperatures. This gives you a precise level of control that gas systems rarely match. Finally, the DigiBoil electric kettle is extremely compact and is the ideal choice for brewers that have space constraints or live in an area where brewing outdoors isn't an option year-round.
110V vs. 220V
The DigiBoil electric kettle comes in two power options, 110 volt and 220 volt. The 110V unit features a standard 3-prong plug and will work with most US household power outlets. The 220V unit features a NEMA 6-30R plug, typically only used with large household appliances such as washer/dryer outlets. Both power options are perfectly suitable for brewing. The 110V option provides greater flexibility, allowing you to move your brewery from the kitchen to the garage, basement, or outdoor patio with ease. If you have convenient access to 220V power, the 220V model will significantly reduce heating times and provide a more vigorous boil.
All Grain Brewing
Extract brewing is the most popular method for beginner brewers, but all-grain is really where it’s at. Instead of using concentrated malt extracts, the fermentable sugars are produced by steeping malted grains in hot water for an extended period of time, a process called ‘mashing’. All-grain brewing offers far greater control over the character of the finished beer, allowing the brewer to finely adjust the color, body, and malt profile. The Fermonster Fermenter - A Huge Upgrade Over Standard Buckets or Glass "Carboy" Water Bottles
Unlike buckets or glass carboys, the Fermonster fermenter was designed for brewing beer. It is made from tough, clear, virgin grade PET plastic so you can see the magic of fermentation. American Ale produces a light colored, hoppy Pale Ale that puts the beloved Cascade hop on full display. Cascade hops are one of the classic American hop varieties, and we love them for their citrus, grapefruit character.
Blonde Ale is a great starter beer for those who are new to craft beer. Blonde ales are an easy drinking ale, low in esters, balanced with enough hop character to accentuate the malt profile.
American IPA is like a Pale Ale on steroids. Take a pale ale and add more malt, more grain, and more hops. Expect more alcohol and a more pronounced hop character.

LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

In 2011, the White House home brewed beer for the first time in, well, perhaps centuries! We were super excited when a MoreBeer! customer first submitted his freedom of information act request for the White House homebrew recipes. We were a little surprised, and we'll say it - let down - when we saw the actual recipes. One MoreBeer! staffer blurted out "Whoa...this seems like beer that Prince Harry should be brewing." English malt extract, English hops, and even an English yeast strain were used; so the only thing truly American was the honey! It seems that we were not the only beer lovers to pick up on this. So while we really, really love English beers as much as the next homebrewer, we think the White House Brewmasters should be using fresh ingredients from well...America.
Since we were tweaking the recipe towards this side of the pond, we decided we could also help educate the White House staff on their yeast selection. Yes dry yeast has gotten better but since it's for the White House and all, we think they can spring for liquid yeast...and is there any better choice for this recipe than Wyeast 1056 AMERICAN Ale or White Labs 001 California Ale?? Not really. In fact, just queue up the star spangled banner, turn on the football game, and throw some hot dogs on the grill because we are starting to feel pretty patriotic here.
So while we send this kit along with our friendly suggestions back to the White House, YOU can make the exact same beer at home. That way if you are in a diner somewhere on the campaign trail and the president pulls up you can whip out a bottle of the 'Honey Pale the White House Should Be Making' or the 'Honey Porter the White House Should Be Making' and enlighten the Top Dog, homebrewer style.

John C. Maier of Rogue Brewing Company, Newport Oregon has been an avid homebrewer since 1982. In the Fall of 1986, he decided to turn his passion into a job and attended the Siebel Institute of Technology, graduating from their 50th course in Brewing Technology. The Alaskan Brewery in Juneau hired John as Assistant BrewMaster in March of 1987. In 1988 he won the prestigious American Homebrewer's Association Homebrewer of the Year award. In May 1989 he left Alaska Brewery, and that same month walked in on the very first brew at Rogue Ales Brewery in Newport, Oregon. He has brewed over thirty million pints of beer for Rogue since.
Rogue beers have won too many awards to list, and the brewery consistently receive the highest level of critical acclaim. In our opinion, Rogue makes some of the most original and best beers anywhere because John continuously experiments to expand and refine his brewing creativity. Imperial India Pale Ale ("I2PA") Recipe We were ecstatic when John offered us his famous Imperial India Pale Ale recipe as an ingredient kit. I2PA is a malty beer that is radically hopped with an intense aroma and hop bitterness. You can think of I2PA as an IPA on steroids.
