Made in the USA by Briess, this Amber Dry Malt Extract (DME) is the perfect fermentable base for a wide range of beer styles! Use it by itself, or to add a little bit of darker color to amber beer styles. Briess Amber DME gets its darker color from the addition of Crystal malts to the mash. After Briess' proprietary multi-step mash program, the wort is placed under a vacuum evaporator to gently remove the water while preserving the wort's full, rich flavor and minimizing additional color development. The mash program ensures high Free Amino Nitrogen (FAN) to ensure good yeast health and a high degree of fermentability. Production in the USA spares Briess extracts from long periods of time in shipping containers and ports, and ensures that you are brewing with the freshest extract available. Beautifully pale to medium amber color in the glass with a spicy aroma and flavors of grape fruit and citrus Includes Perle, Cascade, and Liberty hops Estimated ABV: 6.5% Estimated IBUs: 55 Makes 5 gallons of finished beer If you have a monstrous craving for intense hop flavor, you’ll need a beast of equal proportion to do battle. Her only motive is to slake your thirst and leave you yearning for more – so much so that you’d swim to Infant Island for another taste. With a nice malt backbone (err thorax?) this beast will soar over your tongue and, with a flap of her wings, send a hurricane of hop flavor to assault your taste buds. Jim Nielsen’s Hop Mothra IPA uses 10 lbs of Ultralight Malt Extract, 1 pound of Light DME, and a trio of crystal malts that give this beer a beautiful pale to medium amber color. Perle, Cascade, and Liberty hops lend a spicy aroma with flavors of grape fruit and citrus. Jim began home brewing in 1994, but it wasn’t until the Great American Beer Festival of ‘98 that he came across a beer that would alter the course of his hobby. Grant’s Brewing Company made a batch of beer especially for the festival – Hopzilla! This beer made such an impression on Jim that he decided to take his passion for home brewing to the next level, and he began his search for a brew system that would allow him to do everything the pros can do. He helped MoreBeer! develop one of our first digitally controlled brew sculptures, and not long after he had brewed his own version of Hopzilla that he (unsurprisingly) enjoyed more than the original – HOP MOTHRA! Raise a glass to Jim, and give thanks for this monster of an IPA. After getting a degree in chemistry in 1993, Matt went to work in Michigan doing research and development on hops for the brewing industry. In 1995, Matt went to the famous Seibel Institute of Brewing Technology to further his education. After brewing for Goose Island in Chicago and then moving to California to work for SLO Brewing, Matt was appointed Small Brewmaster of the Year in 2001. Later that year, he was asked to join the crew at Firestone Walker. Two years later Matt was dubbed Mid-Sized Brewer of the Year at the Great American Beer Fest AND at the World Cup of Beer, for a total of 12 medals in just three years! Since then, Firestone Walker has been gaining a large following in California due in part to it's flagship beer, Double Barrel Ale, which is produced in a Burton Union system that has the beer fermenting in barrels. Firestone Walker Brewing Company is the only brewery in the U.S. to ferment in barrels and one of only two in the world. In addition to the line-up at Firestone Walker, Matt also brews the Nectar Ales line of beers, as well as a few of the Trader Joe's house brands. Please Note: In order to better serve our customers, we are now offering our extract recipe kits with either Liquid Malt Extract (LME) or Dried Malt Extract (DME). The majority of our DME kits were converted from the LME version, which is why you may notice slight variances in the extract names and quantities on your recipe sheet. You may also find that your Specific Gravity and ABV% are slightly higher if you choose DME. Whether LME or DME, add all extracts provided according to the recipe sheet. CellarScience® Instant Water™ | Red Water Salts
Optimized Malt Balance: Utilizes a chloride-forward mineral blend to amplify caramel richness and "round" mouthfeel in red and amber ales, paired with a precise sulfate touch for a crisp, clean finish. Instant Precision: Effortlessly transforms RO or distilled water into a reliable, repeatable brewing base. Optimized Chemistry: Precisely balances mash pH and mineral content to unlock your beer's full flavor potential. Expertly Formulated: Developed with brewing authority Colin Kaminski for style-accurate chemistry and optimal mash pH. All-Grain Optimized: Engineered specifically for all-grain mashing to maximize enzymatic activity and mash efficiency. Instant Water™ is not recommended for extract brewing. Built for balance, this profile brings out caramel richness and subtle hop interplay in red and amber ales. Its chloride-forward mineral blend enhances mouthfeel and malt roundness, while just enough sulfate keeps the finish clean and dry. Elevate your home brewing with the CellarScience Instant Water™ Salt Pack — designed in collaboration with Colin Kaminski, co-author of Water: A Comprehensive Guide for Brewers. Each expertly crafted blend of essential salts and minerals transforms reverse osmosis (RO), deionized (DI), or distilled water into an ideal base for brewing. Every formulation is precisely balanced to optimize water chemistry for its intended beer style, helping your brew reach its full flavor potential with style-accurate mineral content and optimized mash pH. Engineered for precision and ease of use, CellarScience Instant Water™ Salt Packs simplify the complex process of water adjustment, providing a reliable and repeatable solution. Importance of Mash pH Proper mash pH is critical to brewing performance and finished beer quality. CellarScience Instant Water™ formulations are designed to place mash pH into the optimal range for each beer style. Improves brewhouse efficiency by supporting optimal enzyme activity during starch conversion Shapes hop flavor and balance by influencing bitterness, smoothness, and aroma expression Enhances clarity and stability through improved protein coagulation and yeast performance With properly conditioned water, you’ll unlock better fermentation, enhanced enzyme activity, and a cleaner, more expressive finish that allows your beer’s true character to shine. Designed to work with: Reverse osmosis (RO), deionized (DI), or distilled water Each pack treats: 6 gallons (23 L) of brewing water For larger batches, add an additional 2 g per gallon Instructions Use only with reverse osmosis (RO), deionized (DI), or distilled water. Add the full contents of this pack to 6 gallons (23 L) of brewing water before mashing. Stir until dissolved. Mash in as usual — no additional acid or salt adjustments are typically required. Proceed with your normal brewing process. Note: These salts are designed to set mash pH without acid additions. Because malt acidity varies, you may wish to verify your mash pH and make small corrections if needed, though this is rarely necessary. Dextrose is used in trace amounts as a processing aid for blend consistency and flow and does not affect fermentation or flavor.
