Universally the first choice for an aroma hop in English Ales. Smooth and delicate with floral, lavender, spice, honey, earth, lemon and thyme overtones. While most hops stand out against the malt, this unusual hop actually blends in and complements the malt flavors. You truly cannot add too much at the end of a boil as an aroma/flavor hop. A classic yeast strain from the notorious Whitbread Brewery. This strain comes from the same brewery as 1098, but is a bit fuller and more malt forward. Works great in low gravity beers as body, mouthfeel and malt character are all maintained, even with a small grain bill. Try this strain in your next traditional English Ale!

This Flander's Red ale recipe is deep red in color with a nice malt structure, this beer is based on those from certain regions of Belgium, and have distinct sour overtones to them. This is due to the wild spores that inhabit the air - and some breweries - of the area. While this would normally be a "bad" thing, the infection lends special tart and sour qualities unlike any other beer can. For a more traditional spin on this kit, try aging it on some oak cubes!
We recommend fermenting this Flanders Red Ale with WLP001 California Ale for two weeks. Then add Wyeast 3763 Roeselare Belgian Sour Blend in the secondary fermenter bucket. This kit does require some special instructions, as it is a special beer. Once the gravity hits 1.015 - 1.020, rack the beer into a plastic bucket and pitch the sour blend tube. Age the beer at 65F-70F for 6 months, until the white cap that will form drops. The reason for the plastic bucket aging is so that tiny amounts of oxygen are allowed to be taken in by the plastic and come in contact with the beer. This micro-oxidation adds to the over all flavor of the beer itself.
Reminder: you will need to keep the equipment used to handle the beer after the sour blend is introduced separated from the rest of your brewing equipment, or clean and sanitize very well after use.

25-29 °L - Viking Malt - Viking Red Ale Malt is aromatic malt rich in melanoidins. It is recommended for dark beers to enhance reddish color and aroma. A special malting program is used to ensure the right flavor and aroma through controlled Maillard reaction. Flavor of Red Ale Malt is malty and bitter but also roasted and nutty flavors can be found with long lasting linger. Red Ale Malt is also slightly acidic. The amylolytic activity of Red Ale Malt is low.
Red Ale Malt is strongly aromatic malt, with coloring capability. It is ideal for special ales like APA, IPA, Red Ale and Dark Lagers. Recommended usage is up to 20% of the grist.
