This ale recipe features the use of clover honey, dried rice extract and sorghum. Try adding some dark candi syrup to give it some color.
Gluten-Free beers are a different world when it comes to finding a suitable replacement for the base extract. Celiacs are allergic to the hordein protein found in the base malts such as 2-Row and Pilsner malt.
They are also allergic to the gliadin protein found in wheat which is the biggest offender of the two proteins. As a homebrewer your goal is to find a suitable fermentable that can emulate the maltiness in beer.
Our Gluten Free recipes use Sorghum extract for the base fermentables. Hops aggressively cut through the maltiness from sorghum easily. Hop additions in gluten free beers tend to be 40-50% less than normal.
All our gluten-free kits include dry yeast due to the small traces of the gliadin protein found in liquid yeast. (Although lab research has found the yeast metabolize the gliadin protein after fermentation and significantly reduce the ppm present.)

We were super were excited when a MoreBeer! customer first submitted his freedom of information act request for the White House homebrew recipes. We were a little surprised, and we'll say it - let down - when we saw the actual recipes. One MoreBeer! staffer blurted out "Whoa...this seems like beer that Prince Harry should be brewing." English malt extract, English hops, and even an English yeast strain were used; so the only thing truly American was the honey! It seems that we were not the only beer lovers to pick up on this. So while we really, really love English beers as much as the next homebrewer, we think the White House Brewmasters should be using fresh ingredients from well...America.
Since we were tweaking the recipe towards this side of the pond, we decided we could also help educate the White House staff on their yeast selection. Yes dry yeast has gotten better but since this is the White House and all, we think they can spring for liquid yeast...and is there any better choice for this recipe than Wyeast 1056 AMERICAN Ale or White Labs 001 California Ale?? Not really. In fact, just queue up the star spangled banner, turn on the football game, and throw some hot dogs on the grill because we are starting to feel pretty patriotic here.
So while we send this kit along with our friendly suggestions back to the White House, YOU can make the exact same beer at home. That way if you are in a diner somewhere on the campaign trail and the president pulls up you can whip out a bottle of the 'Honey Pale the White House Should Be Making' or the 'Honey Porter the White House Should Be Making' and enlighten the Top Dog, homebrewer style.

We would not have put 3 lbs of honey with 4.5 lbs of malt extract in a pale ale, but Jim had no fear and did just that. The result - a really nice mix of malt and honey flavors. There is enough honey to make it through into the flavor. Just a little Cascade hops in the beginning and finish keep the flavor emphasis on the honey. He suggests WLP002 because it is less attenuative and leaves more malt behind.

Made from White Sorghum Grain

Sorghum is gaining popularity as a complete malt substitute in beer. Coeliacs (people allergic to gluten) have to avoid items with gluten in them, including beer. Substituting Sorghum extract for malt extract opens a whole new brewing door for people.
It is mild in flavor, light in body (2-3L). One pound per one gallon of water will yield 1.040 SG. We have experimented with this extract, and have found the flavor of sorghum is not like malt at all. It has a light spicy note to it, and the mouthfeel is virtually non-existent. These two things make brewing with 100% Sorghum a nice little challenge. While the result is a drinkable beer, it needs some work. We suggest trying Heather Tips, Honey, Belgian Candi Syrup, and to stay away from "citrusy" hops. You use about 50% less hops when bittering sorghum extract.
There are some ingredients that cannot be used in brewing a beer for a person who is allergic to gluten such as specialty grains, malt, liquid yeast and dextrin. If you're allergic to gluten, be sure to check with your doctor before deciding which ingredients are safe for you to use in your beer.

The Pinot Grigio grape grown in Ontario is typically an early ripening grape (an evolution of the Pinot Noir grape), allowing for the longer development of delicate floral and honey-like characteristics.

This highly expressive white wine is renowned for its explosive aromatics that rocket out of the glass. Fruit-dominant notes of lychees, marmalade, passion fruit, roses, and grapefruit pith are so entrancing that Gewürztraminer is commonly mistaken to be sweet. In reality, this wine is usually off-dry and some of the best examples are distinctly dry. This pink- to red-skinned grape is not itself a unique variety, but rather an extraordinarily fragrant clone of Savagnin (also called Traminer) known as Savagnin Rosé or Gewürztraminer. The Traminer variety was named after the village of Tramin that resides in a German-speaking province in northern Italy. “Gewürz” is German for spice or seasoning, and serves as an appropriate prefix to a grape that is nothing if not potently aromatic. Despite the German influence clearly present in its name, Gewürztraminer is not grown nearly as much in Germany as it is in Alsace, France, where it remains the most popular white wine of the region. The comparatively colder climate in Germany leads to a more toned down fruit flavor in the grapes. Gewürz made in Germany is generally more dry, less spicy, and with more subdued fruit character than other examples. Our German Gewürztraminer is light-medium in body with a floral character and packed with playful notes of peach, lychee, and honey. An off-dry white wine with no oak presence and an easily approachable alcohol content of 11.5% by volume. Rwanda – Bwishaza Kungahara Process Trio (Washed • Natural • Carbonic)
These are three distinct expressions of the same Kungahara foundation from Rwanda, Bourbon grown at 1,650–1,800 m (5,413–5,906 ft), released as separate process lots. It is genuinely rare to have coffee of this quality from the same origin offered in three unique processing methods, and for anyone roasting coffee, this is an unusually clean way to explore and understand what washed, natural, and carbonic processing actually mean in the cup.
The washed version nails the “clean and sweet” lane without turning thin or sour, starting bright and getting deeper and more syrupy as it cools with grape jelly, black currant, and honey sweetness and a gentle rooibos like finish that keeps everything crisp and tidy (Grape jelly • Sweet black tea • Black currant • Honey). The natural is the same lot in a rounder, fruitier, more juicy form, with ripe fruit sweetness up front, a deeper jammy middle, and a finish that stays surprisingly clean for a natural, think apricot, blueberry, melon, and a light black licorice/anise accent that adds depth without turning funky (Apricot • Blueberry • Melon • Black licorice). And the carbonic is the wild card in the best way, leaning into bigger aromatics and a juicier, more candy like fruit character while staying intentional (not chaotic), with apricot, tart rhubarb like sparkle, melon sweetness, and a lemon lime pop that lifts the finish and keeps it from going heavy (Apricot • Rhubarb • Melon • Lemon lime), and last year this exceptional green scored 95 points from Coffee Review and was chosen the No. 12 best coffee of 2025

Across the trio, the washed lot is the trustworthy “anchor” you can build a lineup around, clean enough to showcase nuance, structured enough to add sweetness, clarity, and a tidy finish in blends without hijacking the cup, while the natural is the more expressive sibling with more fruit, more sweetness, and more aroma that stays controlled and “put together,” and the carbonic is high impact without being a total science project: carbonic coffees can go “funk first” fast, but this one stays surprisingly polished, sweet, bright, and loud in the aromatics, without getting overly boozy or weird. All three tend to reward a careful, lighter roast: keep them clean for clarity and lift, and if you push too far you start trading those high notes for heavier, muddier or muted flavors.
