Cacao Nibs are a great way to introduce rich chocolate flavor into any beer. Impress your friends with a unique tasting experience!
Cacao nibs (also referred to as cocoa nibs) are the key ingredient in chocolate. They are crushed and roasted seeds from the cacao plant. Tcho Nibs have a wonderful cocoa smell to them, and will provide a very subdued cocoa-like flavor to any beer.
You can use these cacao nibs like you would a dry hop, by adding the cacao nibs to your secondary fermenter or keg for a couple of weeks (4 ounces per 5 gallons is a great place to start), allowing the beer to draw out the subtle flavors and aromas of the cacao nibs. They can also be used in the boil or mash - wherever you would like to experiment with them. Adding the nibs pre-boil will impart some bitterness, so use a lot less than you would when adding them to a keg. Stone Brewing Company made a stout using cacao nibs in the boil to actually replace some of the hops in the recipe.
These super high quality TCHO cacao nibs go great with darker beers like porters and stouts, but could blend with any beer - perhaps a wit or a saison! TCHO is an American chocolate company in San Francisco, dedicated to producing high end chocolates.
A great way to add body and head retention to your homebrew. Used especially for stouts, flaked barley can be used across practically all beer styles and is an essential adjunct to have around the brewhouse.
Use as an adjunct in all-grain brews to produce a lighter colored finished beer without lowering the original gravity. The flakes can be incorporated directly into your mash with other grains because they have a large surface area and are pre-cooked so they hydrate and disintegrate quickly. They can be used in place of corn as an adjunct to eliminate corn flavor in the finished beer.
Add to your grist and mash just like any base malt.

Jim was looking for a dark, smooth, creamy mouth feel stout just like an Australian stout he had tasted years ago. Over the years, Jim found a clone that was close but needed some small changes. After many trials and test batches, he came up with this recipe that is very drinkable when it is fresh. It will get smoother with a couple months of aging and creaminess added by the lactose makes this a very good winter warming stout. Jim hopes you enjoy this beer as much as he has. Jim recommends WLP004 Irish ale yeast.

Sahti Malt is a special malt blend for producing the traditional Finnish beer, Sahti. This is a massive Imperial Porter that starts with 15 lbs of base malt and a laundry list of specialty malts. This recipe hails from the Project Extreme Brewing book. It was originally created by Dogfish Head coworkers where it won an internal small batch brewing competition on the basis of its amazing, unique flavors. Big and black with caramel, wheat, black, and chocolate malts to give it a dark, roasty flavor. You provide the Sanka instant coffee, cinnamon, and nutmeg. Named after the coffee drinking, pioneer science teach Mr. Hector Vargus from the 80's movie Fast Times at Ridgemont High. This is one of those rare beers that can age gracefully for years.

Bourbon Belle takes the beautifully complex flavor of Brunch Stout and adds a charming southern drawl. Originally developed and popularized by the Modelo Group, this Mexican yeast strain will produce clean, crisp lagers and finishes dry. Allowing for the balanced expression of malt and hops, BAJA will become your go-to yeast for fermenting Mexican-style light lagers, dark lagers, and cold IPAs. Every batch is PCR tested to ensure contamination free yeast. Dosage: Two sachets are enough to treat a 5–6 gallon batch. When calculating for larger batches, use at a rate of 2.5–4 grams per gallon of wort. We recommend rounding up by one full sachet rather than measuring out the yeast exactly. Similar to "All Out", this recipe combines a variety of dark malts, cacao nibs, and ground coffee for a remarkably rich flavor profile, and then takes it to new vistas with an addition of maple syrup and Canadian whiskey-soaked oak chips. The maple syrup and oak chips are added to simulate the barrel-aging process used for making Founders Canadian Breakfast Stout®, or "CBS". The result is a deeply complex stout that would have Bob and Doug McKenzie swearing off Elsinore beer after one sip. Not to cause a kerfuffle, but patience is key when brewing Sorry Aboot Brunch Stout. We recommend conditioning the beer for 2 to 6 months after the oak chips are added. Best enjoyed in your favorite tuque with a box of Timbits.

Our Irish Red Ale recipe is hard to nail down as any specific style—similar to a big Amber Ale, but it's so unusual it does not really fit within any category. Application:
This yeast product can be applied in a variety of malt mashes. Pinnacle Distillers Yeast (M) can withstand a wide range of starting fermentation temperatures with an optimum range of 82-90°F (28-32°C). Yeast can be either pitched directly to the attemperated mash or rehydrated.
Directions for Use:
Yeast can be added directly to a fermenter at a dose rate of between 4.17-7.5 lbs per 1,000 gallons of wort (0.5-0.9 kg per 1,000L of wort).
Storage:
Store in a cool, dry place. Product should be used within three years of its production date for best performance. Packages which have lost their vacuum seal should not be used. Opened packages can be stored cool and used within 3-4 days.
