This beer combines the richness of black malt with the old-world smokiness of Bamberg: a Franconian village that is at once worldly and yet devoted to its traditional ways. Brewed with an ale yeast, it mimics the origins of English porter, a beer made solely from brown malts dried over a direct wood fire. And since you'll never find a beer like this at your local liquor store, you'll have to brew it to appreciate the flavorful treats it can offer. With an astounding Two Pounds of Rauch Malt, any fan of smoked beers will fall in love with Ray's beer! Ray recommends British Ale yeast, WLP005.
Ray began brewing in 1989 after seeing a homebrew store ad at a Chicago hamburger shack. "The first batch was pretty good," he says, "but the second one was awful. Fortunately, I had already brewed the third batch before tasting the second, or that might have been the end of things. After tasting that beer, there was no looking back: I dove headlong into brewing and tasting and learning as much as I could about the art of brewing." That informaton was put together in his book, "Designing Great Beers", which has since become a must-have for any serious brewer. Over the years he has brewed more than 200 batches. When he started all-grain brewing in 1990 there weren't many options for buying mashing equipment, so he made his own 10-gallon vertical Coleman cooler Mashtun. More than 90 percent of the 200 batches he had made over the years were produced on the homemade equipment--although now the mash tun has been retired after some unsuccessful modifications a few years back.

This Scotch Ale recipe is a huge, malty beer with a deep rich copper color. Scotch Ales have a flavor a little reminiscent of single malt Scotch with smoky overtones and roasted flavors. With a 1.075 to 1.080 starting gravity and 24 IBU of bitterness, it is distinctly malty, but not cloying like some Scotch Ale recipes. Scotch Ale strains typically ferment well down to 60 degrees and leave behind very few esters or fruity flavors, emphasizing the malt.

Maybe you have heard of John Palmer? His best selling "How to Brew" is the default homebrewing text. John gave us this recipe early on and it has always been a special recipe. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.
The Artisan Hops® Hop Shot is an easy way to boost IBUs without adding vegetal matter to your beer. The Artisan Hops® Hop Shot is an easy way to boost IBUs without adding vegetal matter to your beer. This CO2 hop extract is a blend of Cascade and Willamette hops, which will impart a slight citrus, fruity character to your beer. 1 mL boiled in 5 gallons of 1.050 wort for 60 minutes will add approximately 7 IBUs.
Add to boiling wort only. We recommend softening the extract before use. Place the syringe in a warm glass of water at the beginning of your brew day, or create a slurry by adding the extract directly to a small amount of pre-boiled water.

A very well balanced Pale Ale. You can taste the malt and the hops without being overpowered by the bitterness. We use Crisp Maris Otter malt for a drier finishing Pale Ale. We differ from the standard British Pale Ale recipes by throwing in a 1/2 of Munich for a little roundness of flavor and 1/2 pound of Carapils for added body. The crystal malt used is British Carastan. Northern Brewer hops are really mellow and not at the front of the flavor profile.

A few years age we had a competition in our Concord showroom for the best Holiday Beer. The winner was an unknown brewer named Kyle Sommers. We loved the big body, rich malt, and the extremely complex spice blend. When we went to make the recipe for sale we thought twice because we had to buy out the spice section of our local grocer. Spices include small amounts of All-Spice, Cloves, Nutmeg, Saigon Cinnamon, and Ginger.
Based on a Northern English style Brown Ale, it has 6 different spices added at two different times in the brewing and fermentation process, resembling and inspired by a Belgian-style winter beer. This winter warmer will make your kitchen smell like Thanksgiving Day at Grandma's house. With some added Belgian brown sugar to counter-balance the spice and add some alcohol content, this is a great way to top off your Holiday adventures by the fireside. If you are a firm believer in the Reinheitsgebot (no spices, sugar, etc.), this is not the beer for you!

For many years Sabro™ brand HBC 438 has been unofficially referred to as Ron Mexico due to its native US neomexicanus hop heritage, and was once one of the more difficult hops to get your hands on. It developed such a huge cult following in the brewing community that you can trace the recent boom in available neomexicanus hop varieties back to HBC 438. Sabro is notable for its complexity of fruity and citrus flavors. It imparts distinct tangerine, coconut, tropical fruit, and stone fruit aromas, with hints of cedar, mint, and cream. Sabro’s pedigree is the result of a unique cross pollination of a female neomexicanus hop. With a robust brewing performance, Sabro proves to be a strongly expressive hop that translates its flavor incredibly well into beer.
Vinnie of Russian River Brewing once used this hop in an experimental beer brewed for the National Homebrewers Conference, which was an absolute hit. We recently toured Russian River's new Windsor brewery with Vinnie, and he still raves about this hop and will happily talk about the origin of the Ron Mexico alias with a Cheshire grin on his face. 1.8° L - Briess Brewers 2-Row is a fantastic base malt that can be used for all beer styles. Briess 2-row contributes a clean, sweet, and slightly malty character along with a light straw color. Briess Brewers Malt is malted in Wisconsin in small batches and is an excellent fit for all ales. Use this the same as you would any 2 row base malt and expect amazing results in your glass. Briess is an American malting company that is vertically integrated with seed facilities, barley collection facilities, and direct relationships with farmers in the state of Wyoming. In this region malt is flood irrigated so that it does not have to rely on rainfall. This has the benefits of quality and consistency for you the brewer. Malt that is flood irrigated is lighter in color since the barley heads see very little rain. The flood irrigation is also consistent and reliable so Briess sees less variability in their malt from year to year. This recipe was designed by Regan Dillon, original MoreBeer! partner, whose favorite beer style was Porter. This classic German hop has an herbal/floral character and smooth bitterness, making it an ideal choice for brewing lagers, especially traditional pilsners. Hallertau Mittelfruh is one of the original four Noble hops, and is categorized as a "landrace" hop, meaning that it grew and adapted naturally over time in its native region. Its name is derived from the region of Hallertau, the world's largest hop growing region, and the German word mittelfrueh meaning "middle-early", referring to the early middle part of the growing season when it's ready to be harvested. The majority of its oil content comes from Humulene which provides the floral, herbal, and spicy character. Clean, crisp, and perfect for your next pilsner or hoppy lager.

Amarillo® hops enjoy a special place of adoration in the hearts of brewers. Often described as a supercharged version of Cascade. Bursting with floral, tropical, and citrus (lemon, orange and grapefruit) characteristics, but it has a distinctive Orange character to it that is very different from Cascade.
