A very well balanced Pale Ale. You can taste the malt and the hops without being overpowered by the bitterness. We use Crisp Maris Otter malt for a drier finishing Pale Ale. We differ from the standard British Pale Ale recipes by throwing in a 1/2 of Munich for a little roundness of flavor and 1/2 pound of Carapils for added body. The crystal malt used is British Carastan. Northern Brewer hops are really mellow and not at the front of the flavor profile.

In 2011, the White House home brewed beer for the first time in, well, perhaps centuries! We were super were excited when a MoreBeer! customer first submitted his freedom of information act request for the White House homebrew recipes. We were a little surprised, and we'll say it - let down - when we saw the actual recipes. One MoreBeer! staffer blurted out "Whoa...this seems like beer that Prince Harry should be brewing." English malt extract, English hops, and even an English yeast strain were used; so the only thing truly American was the honey! It seems that we were not the only beer lovers to pick up on this. So while we really, really love English beers as much as the next homebrewer, we think the White House Brewmasters should be using fresh ingredients from well...America.
Since we were tweaking the recipe towards this side of the pond, we decided we could also help educate the White House staff on their yeast selection. Yes dry yeast has gotten better but since this is the White House and all, we think they can spring for liquid yeast...and is there any better choice for this recipe than Wyeast 1056 AMERICAN Ale or White Labs 001 California Ale?? Not really. In fact, just queue up the star spangled banner, turn on the football game, and throw some hot dogs on the grill because we are starting to feel pretty patriotic here.
So while we send this kit along with our friendly suggestions back to the White House, YOU can make the exact same beer at home. That way if you are in a diner somewhere on the campaign trail and the president pulls up you can whip out a bottle of the 'Honey Pale the White House Should Be Making' or the 'Honey Porter the White House Should Be Making' and enlighten the Top Dog, homebrewer style.

We would not have put 3lbs of honey with 7 lbs of malt in a pale ale, but Jim had no fear and did just that. The result - a really nice mix of malt and honey flavors. There is enough honey to make it through into the flavor. Just a little Cascade hops in the beginning and finish keep the flavor emphasis on the honey. He suggests WLP002 because it is less attenuative and leaves more malt behind.

The legendary Frank Ellis, Grandfather of our Signature Series Kits, brings you his over the top Pale Ale with an amazing 7 oz of hops and 9 lbs of malt extract. It has the malt, alcohol and hoppiness of an IPA but the bitterness of a Pale Ale. Frank started with our American Pale Ale II, KIT250 – but this wasn’t enough flavor for Frank. So he added one pound of malt extract, more finish hops, followed by... yet more finish hops! The resulting flavor is malty with plenty of hop flavor, courtesy of the copious amounts of Cascade and Willamette hops. One day while on the phone placing an order with us, Frank got tired of having to make these additions to our existing KIT250 so he asked why he couldn’t have his own kit to cut down on confusion. He was absolutely right! So the series was born! When you are drinking any of the Signature Series recipes, raise your glass and give a virtual cheers to fellow homebrewer Frank Ellis in Missouri for the good idea. This delicious Pale Ale is based on new experimental hop, HBC438, that has the unofficial name of Ron Mexico due to its native US neomexicanus hop heritage. This hop has enticing aromas of stone and tropical fruit, orange, mint, and herbal characteristics. Vinnie from Russian River Brewing (of Pliny fame) used this hop in an experimental beer brewed for the National Homebrewers Conference and also recently raved about this hop in a talk we attended.
The story of this hop is really unique. Traditionally hop breeders finish the testing of experimental hops internally and then release to the commercial market. Now they are turning the tables and trying something new! HBC 438 is being released EXCLUSIVELY to the Homebrewing community first. Then in the future, as more is grown, they will release it to commercial brewers. So the tables are flipped - Pro brewers will be reading your reviews and seeing what you thought of the hottest new hop.
What is also cool is that all proceeds from the sales of these hops go to ALS.net and help fund the ALS Therapy Development Institute, the world's largest non-profit biotech focused entirely on ALS Research.

Phil created this recipe in an effort to stop his long, slow spiral into fruity, phenolic, sour beers that began to populate his fermenters and kegs back in 1998. Honestly, Phil seriously contemplated throwing gummy bears into his brew and realized it was time to step back, look around, sober up, and grab a classic West Coast pale ale.
This beer is dominated by the wonderful Amarillo® hop that is known for having a citrus/orange flavor. The Left Coast Pale has been brewed many times over as a house favorite during the Fermentation Frenzy shop era (Los Altos, CA circa 1997-2007). Try it, you'll like it. And, unfortunately, so will your friends.
Phil recommends for an even more pronounced hop nose and flavor you add an additional 1oz of Amarillo® hops to the fermenter as a dry hop addition (not included with kit).

Shaun's brewing career started like most in the beer industry - homebrewing. While working at a Southern California law firm, Shaun was spending his time making beers at home. We recently had a simple, yet exciting idea: What if we brewed the same recipe, used the same yeast, but changed one thing - the flavor, aroma, and dry hop additions using one hop varietal. That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: 2-Row, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: 2-Row, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. The malt in this recipe is basic and fairly neutral, the bittering clean and consistent, but the flavor and aroma from the late hop additions will vary; sometimes dramatically!
