This is a massive Imperial Porter that starts with 15 lbs of base malt and a laundry list of specialty malts. This recipe hails from the Project Extreme Brewing book. It was originally created by Dogfish Head coworkers where it won an internal small batch brewing competition on the basis of its amazing, unique flavors. Big and black with caramel, wheat, black, and chocolate malts to give it a dark, roasty flavor. You provide the Sanka instant coffee, cinnamon, and nutmeg. Named after the coffee drinking, pioneer science teach Mr. Hector Vargus from the 80's movie Fast Times at Ridgemont High. This is one of those rare beers that can age gracefully for years.

The pulley system enables you to multiply your pulling force by 4 times. If you apply 60 lbs of pulling force, the pulley can lift 240 lbs with relative ease. Be sure that the beam you mount the pulley to is rated for the total amount of force being applied i.e. pulling force plus load weight, so for this example 300+ lbs.

The legendary Frank Ellis, Grandfather of our Signature Series Kits, brings you his over the top Pale Ale with an amazing 7 oz of hops and 9 lbs of malt extract. It has the malt, alcohol and hoppiness of an IPA but the bitterness of a Pale Ale. Frank started with our American Pale Ale II, KIT250 – but this wasn’t enough flavor for Frank. So he added one pound of malt extract, more finish hops, followed by... yet more finish hops! The resulting flavor is malty with plenty of hop flavor, courtesy of the copious amounts of Cascade and Willamette hops. One day while on the phone placing an order with us, Frank got tired of having to make these additions to our existing KIT250 so he asked why he couldn’t have his own kit to cut down on confusion. He was absolutely right! So the series was born! When you are drinking any of the Signature Series recipes, raise your glass and give a virtual cheers to fellow homebrewer Frank Ellis in Missouri for the good idea. Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)

LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.
A refractometer is used to measure the density of a solution, in our case how much malt sugar is in solution.
Featuring both a Brix scale AND a Specific Gravity Scale
Our refractometer is unique in that it features both a Brix Scale and a Specific Gravity Scale, the scale most homebrewers use.
Why use a Refractometer you ask?
Are you tired of not hitting your desired target gravities? Have you tried to cool a large sample so you could use a hydrometer and see what your gravity is? A refractometer allows you take instant gravity readings, with just one drop, at any point during the boil, or even during the run off of the sparge during an all-grain brew. These 'during the process' readings allow you to add more water or boil longer so you can attain exactly the gravity you desire.
Refractometer Statistics
Our refractometer is hand held with a metal body, flexible eye piece and rubber grip. It features a 0 to 32% Brix scale and from 1.000 to 1.120 on the Specific Gravity Scale with .2% resolution and ATC (Automatic Temperature Compensation). Traditional refractometers without ATC are calibrated to work at 68 degrees Fahrenheit. The ATC function allows you to use the refractometer in an ambient temperature range of 50-86 degrees Fahrenheit (10-30 Celsius.) Because your sample is just one drop, and will quickly adjust to the temperature of the refractometer, the temperature of the sample is irrelevant. Our unit also comes with a manual calibration knob that is secured with a lock nut. To calibrate place one drop of distilled water on the testing platform and adjust to zero if necessary.
Getting Geeky about why the Specific Gravity Scale on our unit is accurate
Some dual scale refractometers feature a linear scale that multiplies brix by 4 to get Specific Gravity. This is okay at lower gravities up to around 1.040 but the higher your starting gravity goes, the less accurate the conversion is. For example, take a Brix reading of 10, multiply by 4, and you get a SG reading of 1.040 - the accurate SG reading is 1.041. Take a Brix reading of 20, multiply by 4, and you get 1.080 - the accurate conversion is 1.084. We worked with our Refractometer manufacturer to create a unit with a non linear conversion and thus this model can be accurately used for Specific Gravity readings.
NOTE - Refractometers will not read correctly if alcohol is present. We have a spreadsheet that can be used to help determine your actual gravity or brix, and this can be found in the "Documents" tab above.

This big brusing beer, with an amazing mouth feel from copius amounts of German Munich Malt, is big on deep malt flavor and big on alcohol. It is the antithesis of todays super citrusy hopped, pale colored IPAs. This is all about malt, malt, malt and how British Kent Goldings (BKG) hops blend oh so well with a malt heavy beer. British Kent Goldings are the most prized ale hops in England and known for their subtle nature and floral aromas that really compliment malt flavors. The "Original Gatoraid", Bière de Garde was said to give the French and Belgian farmer a much needed boost of energy during the day, due to the low alcohol and relatively high residual sugar content. Our version has a bit more malt than tradition dictates, but we think you will find this beer highly drinkable. The malt is the focus of this style of beer, with a slight toasty nose from the Munich. A yeasty character is not uncommon, and is achieved by an extended period of contact with the yeast bed – some commercial breweries go for up to six weeks! This should be fermented at 64°F.

Gary Glass started homebrewing in 1992, shortly after tasting his first homebrew while attending while attending college at Cal Poly, San Luis Obispo. Gary brews on a home-built HERMS system, and he's never brewed the same recipe twice and can't brew any recipe without some kind of tweaking. Gary is a BJCP judge who has judge in many competitions including the World Beer Cup and the Great American Beer Festival. Gary is also now president of the American Homebrewers Association!
Gary holds a Masters Degree in American Diplomacy from the University of Colorado at Boulder. When not homebrewing, he enjoys fly fishing, hiking, and backpacking in the Rocky Mountains. He's also into gardening (his Cascades finally produced a good crop this year!), home improvement projects, and building furniture.

Gary enlightens us on how to authentically brew his beer: "This recipe can be brewed as either a Maibock or a Belgian strong ale. The beer was originally brewed as a 10.5 gallon batch split into two carboys with yeast slurry from previously brewed pilsner. To accurately recreate the Belgian strong ale, one should accidentally pour hot wort (due to user error with a counter-flow chiller) onto lager yeast slurry, being sure to thoroughly cook the yeast. Chill, then pitch a vial of Belgian ale yeast. The Maibock came out great, the Belgian strong even better. Of course, if you don't feel like attempting to cook yeast to make this beer, a nice big starter of Belgian ale yeast should do the trick."

Looking for the perfect Pale Ale to share with friends this summer? Do you like a Pale Ale with a rich malt flavor and a ton of hop character but without an overwhelming bitterness? Then the Pale Ale II should be your next brew.
We took our American Pale recipe and upped the malt, threw a ton of hops in the finish for flavor, but kept the bitterness the same. We think toning down the perceived bitterness is one reason we consistently get great reviews from brewers sharing this with friends.
Keeping it real: Part of the success of this kit is blending a lot of Willamette and Cascade hops in the finish. This isn't a wild, new or crazy idea... this is old school. Cascade and Willamette were the hops that helped put craft brewing on the map in the 1980's. The reason they are still so popular... they make a damn good beer. We like damn good beer. And yes we like to wear our Sperry Topsiders and listen to Van Halen when we drink this (note if you were born in the 80's ignore this comment).

A hybrid lager strain that performs well at ale temperatures and demonstrates a full and provacative flavor profile. An absolute must for San Francisco style lagers!
