Specific proportions of a Belgian style ale strain, a sherry strain, two Brettanomyces strains, a Lactobacillus culture, and a Pediococcus culture produce the desirable flavor components of these beers as they are brewed in West Flanders. Propagation of this culture is not recommended and will result in a change of the proportions of the individual components. This blend will produce a very dry beer due to the super-attenuative nature of the mixed cultures.

This Flander's Red ale recipe is deep red in color with a nice malt structure, this beer is based on those from certain regions of Belgium, and have distinct sour overtones to them. This is due to the wild spores that inhabit the air - and some breweries - of the area. While this would normally be a "bad" thing, the infection lends special tart and sour qualities unlike any other beer can. For a more traditional spin on this kit, try aging it on some oak cubes!
We recommend fermenting this Flanders Red Ale with WLP001 California Ale for two weeks. Then add Wyeast 3763 Roeselare Belgian Sour Blend in the secondary fermenter bucket. This kit does require some special instructions, as it is a special beer. Once the gravity hits 1.015 - 1.020, rack the beer into a plastic bucket and pitch the sour blend tube. Age the beer at 65F-70F for 6 months, until the white cap that will form drops. The reason for the plastic bucket aging is so that tiny amounts of oxygen are allowed to be taken in by the plastic and come in contact with the beer. This micro-oxidation adds to the over all flavor of the beer itself.
Reminder: you will need to keep the equipment used to handle the beer after the sour blend is introduced separated from the rest of your brewing equipment, or clean and sanitize very well after use.

Stop leaving clean, perfectly good, wine or beer in your tank and always drain from the perfect height with our tri-clover style rotating racking arms. Remove your existing tri-clamp butterfly valve and place this rotating racking arm between the tank and your valve. When it is time to rack off slightly loosen the clamp nearest the tank and use the built-in handle to rotate to just about the lees level.
A white rotatable gasket is placed between the welded in tank fitting and this rotating arm. Because the micro finish of the gasket is hard and slippery it allows the rotating arm to rotate in place. A standard black EPDM gasket is placed between the rotating arm and the butterfly valve and is always kept completely tightened.
The length of the arm after the elbow is 10.5" allowing you to draw from roughly 8" above or below the valve level. The arm measures 9.5" from the TC fitting to the elbow. We suggest you assemble the rotating arm and butterfly valve in such a way that the arm is pointed in the same direction as the handle on your butterfly valve. In this manner you always know how the racking arm is positioned in your tank.
