Originally grown in Northern England, Northern Brewer has become one of the main hops grown in the Hallertau region of Germany. Northern Brewer is a great dual-purpose hop that is more balanced than U.S. Northern Brewer, which has been decreasing in acreage in the states year after year. Northern Brewer hops are known for their grassy, herbal, and piney aromas. Mostly used in European ales, Stout, Porter, and Lambic, but also a staple ingredient in California Common.

Originally released in 2013, Cashmere was developed by Washington State University as a cross between Cascade and Northern Brewer. With a higher alpha acid content than Cascade, this dual-purpose hop has a smooth bitterness, but really shines as a late addition hop when used at knock out, whirlpool, or dry hopping. Expect an herbal, slightly spicy aroma with notes of lemon, lime, melon and stone fruit.

This German-style Wheat Beer has a lovely blond color and distinct hazy appearance in the glass. The flavor for German Hefeweizen is primarily based on the flavor of the very specialized Hefeweizen yeast, so be sure to select one of these strains for fermentation. Just be ready for a vigorous fermentation! This beer is known to pop off airlocks if there isn't enough room in the fermenter. This kit does not contain any steeping grain, using 100% Bavarian Wheat malt extract. A dash of Northern Brewer hops provides just enough bitterness to balance the malt and yeast character. Despite the simple recipe, this is one of our most popular ingredient kits. Our German Hefeweizen is a customer favorite that has brought home many ribbons.

Not true with our Scotch ale where the deep malt flavor is king. Scotch Ale yeast strains typically ferment well in the low-to-mid 60's and leave behind very few esters or fruity flavors, which further emphasizes the malt. Craig has been perfecting his Travelin Man recipe over the years by brewing for competitions and for his own consumption at home. Travelin Man is at the high end of the pale ale guidelines, with a nice balance between the malt and hops. This is a great beer to let cold condition. Cold conditioning brings forward the malt flavors and makes it even easier drinking. Craig created this beer to take the edge off a long day of driving on the southern California freeway system and as his house ale. So whether you have been to the East or just feel like someone has given you the third degree, this fine ale will deliver what you are looking for. Possibly the most popular modern brewing hop around. Citra® hops are highly sought after among craft and home brewers for their intense citrus aroma and flavor. Citra® boasts grapefruit and lime aromas along with gooseberry, passion fruit, and lychee notes. Chinook hops are a very distinctive dual-purpose hop used in Ales for both bittering and flavor/aroma. Chinook hops are commonly used in West Coast style IPAs. Distinct, medium intensity spice and pine characteristics with subtle notes of grapefruit. Some consider the bittering quality of this hop to be a bit rough because it has a lingering quality. On the other hand, some brewers can't get enough! The flavor/aroma is spicy and unique, with a huge following of loyal fans.

Centennial hops are a balanced bittering and aromatic hop with a decidedly American nature and uniquely pungent flavor. An intense citrus aroma with pronounced lemon notes also gives off some floral qualities that blend well with West Coast IPAs, American Pale Ales, and other hop-forward styles. Centennial hops are sometimes referenced as a super charged Cascade without the grapefruit flavors. Centennial hops also blend well with Chinook and Columbus hops.

The "Original Gatoraid", Bière de Garde was said to give the French and Belgian farmer a much needed boost of energy during the day, due to the low alcohol and relatively high residual sugar content. Our version has a bit more malt than tradition dictates, but we think you will find this beer highly drinkable. The malt is the focus of this style of beer, with a slight toasty nose from the Munich. A yeasty character is not uncommon, and is achieved by an extended period of contact with the yeast bed – some commercial breweries go for up to six weeks! This should be fermented at 64°F.

California Common is a unique beer style dating back to the days of the California Gold Rush, when brewers on the west coast incorporated caramel malts and additional hop character into their lager beers, helping mask the effects of warmer fermentation owing to a lack of available refrigeration. The resulting beer was a jack-of-all-trades: malty and full-bodied enough for a winter evening, but also hoppy and dry enough for the hottest California afternoon.
Here at MoreBeer! we love the classics, and Cal Common is no exception. But we’re a long way from 1849 and it’s time to give this classic, nearly forgotten beer style a chance to step into the modern age. To do that, we’ve combined the Northern Brewer hops that typify California Common with the Simcoe® hops that are so prevalent in today’s California IPAs, creating our first ever hop blend, “Norcoe.” The resulting beer is still a delicious jack-of-all-trades, but with a hop profile that’s at the same time common, and not Common at all!

Magnum is a great bittering hop with an aroma similar to a strong Willamette. It therefore works well with Willamette, Fuggles, and British Kent Goldings when used as an aroma hop in later boil additions. Magnum makes an incredibly useful bittering agent in just about any beer, and due to its very smooth bitterness, you can really use as much as you want.
Clean smooth bitterness with a slight floral/fruity aroma. This German variety generally has a higher AA content than US Magnum. This is the main high alpha variety grown and used in Germany. Fantastic hop to use for bittering.

Lemondrop™ was originally developed by Hopsteiner as Experimental #01210 and released in 2012. Derived from Cascade, you will find some familiar flavors residing in these lupulin glands. The hops name alludes to the aroma descriptors of lemon, mint, green tea, and slight melon. Columbus, or CTZ (Columbus, Tomahawk, and Zeus), is a high alpha varietal with a neutral bitterness and intense aroma. A true dual-purpose hop that works very well for bittering, but shines just as easily as a late addition. CTZ hops have an earthy, spicy character that is great for bittering. But when used as an aroma addition, you'll find more floral and citrus notes come out that can be very pungent. Columbus is a perfect choice for IPAs, Pales, Imperial Ales, Hazys, Stouts, and Lagers.

If you want a beer that tastes like it came straight from a tropical paradise, BRU-1 is the obvious choice. Developed through open pollination at Brulotte Farms in Toppenish, Washingthon, this new hop varietal is absolutely bursting with the sweet, fruity aroma of pineapple. It works well on its own for single hop beers, providing plenty of alpha acids up front in the boil and contributing complex flavors of pineapple, pear, apple and fresh cut grass when used for whirlpool and dry hop additions. It also plays well with other hops to create a depth of fruit flavor and comes highly recommended for Pale Ales, IPAs, Hazys, IPLs, and wheat ales.
