Step Mash Adjusted Recirculation Temperature. While the acronym is a bit of a stretch it does live up to its name. It is a smart way of doing temperature adjusted step-mashing.
The way it works" Liquid from below the screen in the mashtun is pumped out and through a 25' or 50' 1/2" copper coil that is placed in the hot liquor tank, where the water should be 170 degrees. The heated wort is gently put back on the top of the grain bed. The continual recirculation will raise the entire mash temperature without having to add a flame under the mashtun nor having to stir the grain bed.
While you may or may not want to do step-mashes, the SMART system is also good for maintaining the mash temp (which is especially handy in cold weather, or for long mashes) as well as achieving mash out temperatures in the mid 160's. A mash out is when you raise the entire temperature of the mash after conversion has been achieved. The increased heat allows more sugar to go into solution during the sparging process which produces greater efficiency.
Another advantage of SMART systems is wort clarity. When you are doing recirculation or mash-outs you are using the grain bed as a filter to remove particulate from the recirculating wort.
