Less-Modified Pils (50 lb Sack) GS345
This malt is made by Briess. It was researched for two years during which time that brough in every pilsner malt they could find. They think this is the superior pilsner malt available and we would love to hear feedback from all you brewers. We have used in decoction Pils where it worked out really well. Briess says this malt has enough degree of modification to be used in single infusion mashes and they have numerous micros using it in this manner. The flavor is definitely malty. This would be the malt you would want to use if you are doing step mashes utilizing a protein rest. Here is what Briess has to say about the Less-Modified malt, which they label their Pilsen Malt: Because of the lower protein levels, Pilsen Malt yields a slightly higher extract and tends to have a lighter color than 2-Row Brewers Malt. Pilsen Malt imparts a delicately sweet flavor which results in a smoother, less grainy flavored beer. Pilsen Malt has a significant difference in flavor than 2-Row Brewers Malt. Pilsen Malt is a superb base malt for pilsen beers, and may be used as a base malt for all beer styles. The enzymes in all varieties of the current crop are sufficient to support high percentages of specialty malts and adjuncts without altering brewhouse procedures.
