Baird Brewing's Strong American Ale (All Grain)

Many homebrewers are familiar with Chris (known as "cj in j" or "just cj" on many online forums) and recognize his vast brewing knowledge. Chris has lived in Japan since 1980, and is the current brewer for Baird Brewing Company. Most of their beers are American-influenced, with lots of malt and hops up front.
Chris says, "I started homebrewing in 1999 mainly because I was looking for a hobby that would keep me off the streets and out of trouble. I mentioned homebrewing to my sister, and she sent me a simple homebrew setup and an IPA extract recipe kit. Within a year, I moved to all-grain. Around the end of 2000, I met Bryan Baird, the driving force behind Baird Brewing, when he was brewing on what was basically a homebrew setup, 30 liters (~8 gallons) at a time. I helped out brewing on that system and later helped out again when the brewery expanded with a 250-liter (~65 gallons) system. In December 2008, Bryan gave me an early 50th birthday present -- a job offer, which I accepted quickly. On March 31, 2009, I walked out of the university I'd been teaching at for 18 years and started my brewing career on April 1. And I couldn't be happier!"
This recipe, named "BakaYaro!", was brewed five months before Chris joined Baird Brewing, based on a homebrew recipe that he had been brewing for several years, and has since become a hit at the brewery. It's strong, bitter, dark, hoppy, malty. White Labs Edinburgh WLP028 is recommended.
