Description

  • 3724 is the classic farmhouse ale yeast. Spicy with complex aromatics, including bubble gum
  • It is very tart and dry on the palate with a mild fruitiness. Expect a crisp, mildly acidic finish 
  • Activator Smack-Pack System™ "proofs" the yeast and shortens lag time when it hits your wort
  • When smacked, the Activator™ packet releases sugars and nutrients to initiate the culture's metabolism
  • Wyeast has been a pioneer in craft brewing for over 35 years and is committed to creating the finest fermentation products available
  • Although beneficial, cultures do not need to be activated prior to inoculation

This strain is the classic farmhouse ale yeast. A traditional yeast that is spicy with complex aromatics, including bubble gum. It is very tart and dry on the palate with a mild fruitiness. Expect a crisp, mildly acidic finish that will benefit from elevated fermentation temperatures. This strain is notorious for a rapid and vigorous start to fermentation, only to stick around 1.035 S.G. Fermentation will finish, given time and warm temperatures. Warm fermentation temperatures at least 90°F (32°C) or the use of a secondary strain can accelerate attenuation.

I have been using this yeast for years and I've never had a bad batch. Additionally, the flavor is great and the attenuation is reliable and predictable within a wide temperature range.

Love this yeast! You can totally manipulate the flavors you get from it by accurate temps. I open ferment with tin foil on my blow off. Not a fan of under pitching. I pitch #3724 more like lager and have no stall issues. Great yeast always tasty!

Lazy fermentation
Picky yeast. I knew ahead of time I may have issues from what many on the brewing forms had mentioned, but I thought I would try it. I made a 2L starter. It took right off and fermented vigorously at 80F held there with temp control. After 4 weeks it appeared completely done..no activity whatsoever. I took a gravity reading and it was 1.035. I couldn't believe it. I racked and added Belle Saison to finish. It did smell good, but it's finicky fermentation is something I don't want to mess with. There are more reliable yeasts. Try at your own risk.

Worked well for me.
I made my own recipe of a honey Saison with this strain. Left it at 90-91F for 1 mounth. Was a very slow, steady, fermentation. Fantastic results, but clearly needs special attention. Keep the heat on and be patient. Worth it.
