Erik Beer was the president of the local homebrew club, DOZE, for a number of years.  During that time, he created and perfected recipes for a number of different brews, this easy-drinking Cream Ale being one of them.  Featuring a blend of Pale and Pilsener Malt with some Flaked Maize thrown in to lighten things up, this beer is sure to be a hit with everyone you share it with. (If you share it at all!).  Hopping is light on this one, but definitely enough to balance things and make this brew go down smooth.

Is the ingredient sheet accurate? I put the ingredients into BeerSmith and coming up with a 6.8% beer, 34 IBU which is out of style guidelines.

BEST ANSWER: Hi John - What do you have your efficiency set at in BeerSmith? Our kits are typically written with a 72% brewhouse efficiency. Agreed over 1% ABV is a bit of a large gap.
Beer has been in the primary fermenter for two weeks and there is no noticeable activity. The color seems to be significantly darker then the recipe picture. Any thoughts?

BEST ANSWER: I just made a cream ale yesterday (03-10) which turned out darker, too. Not sure why. But I put Safale-05 dry yeast in it about 9pm at 67 degrees & had some activity this AM.
If you don't have activity after two weeks, try using a new packet of yeast. But going this long with no activity, may lead to contamination since the yeast activity helps hold down contamination. Don't give up after all the work when a seven dollar pack of yeast may save the day, but act quickly. GOOD LUCK!
Brewing this today. What is the recommended CO2 volume once I keg it in a few weeks? I’m guessing around 2.5? Prost!

BEST ANSWER: Hi Aaron! While we don't have a recommended CO2 volume for this kit, about 2.5 PSI (and maybe a little bit lower) is in line with the style. Cheers!
What is the brand of grains that are used for this? I ask because I bought some Viking 2-row and Viking pilsner and after 3 batches I cannot get the same flavor that this kit provided!

Cream Ale
Putting this one into one of my standards for a beer on the easier to drink side. This one is perfect if you want a beer that is one that you want a quick refreshing beer that goes well with all your grill favorites & Italian meals or one you don't want to be hopped out on. It does have nice hop flavor and finishes cleanly.

It was quite good
We brewed this a few weeks ago on July 4th and started to drink it a few days ago, it's great. We did add some orange zest to primary as my girlfriend loves the local orange cream ale we get at the local watering hole. In a few days we have almost kicked the keg, I give it another 2 days :)

I understand how frustrating a less-than-satisfactory crush can be, especially when it affects your efficiency. While we understand this sometimes results in a poor crush, we have a company wide standard mill gap of 1.651 mm. For almost all grains we sell, this results in the best crush possible. While this mill gap may remain the same, the size of the grain may vary and result in a more fine or coarse crush. We always advise brewers to check the crush level and adjust your mash length or schedule in order to get the best extraction.

very good beer.
I finally brewed a beer that my wife likes. finished at 6.5 ABV. Has a very light golden color, with a nice light malty flavor. Will definitely brew again.

Great Cream Ale
I honestly hadn't had a cream ale in years. They're more common in Canada (where I'm from) but you can not find them in California. This kit produced a pretty good cream ale - smooth texture, a bit of sweetness, very high drinkability. Reminded me of a Sleeman's Cream Ale (for comparability).

My father in law only likes lighter beers and loved this.

The recipe is very straight forward. Fermentation, for me, was pretty fast and aggressive (tons of krausen). Don't be worried if the wort looks darker than expected initially.

All in all a great recipe. Will be making a mental note to re-create this recipe later in the summer.
