The Wort Chiller
Wort Chillers are an essential beer making tool used to cool boiling wort (beer before it's fermented) down to a temperature we can safely add our beer yeast to. Ideally, we are looking to cool the wort to around 60-70F for Ales and 50-60F for Lagers to start fermentation if possible.
However, beginning around 130F there are some bacteria and wild yeast commonly found in the air that can survive these warmer temperatures. If allowed to get a hold in our beers they would create off-flavors and ruin the batch. So, the quicker a home brewer can cool the wort from boiling to the suggested starting temperature range for our chosen beer yeast, the less time there is for some air-born organism to contaminate our beer.
